Prepare Kofta Kebab:

-Boneless beef cubes 750g (with 20% fat)

-Pyaz (Onion) 1 medium

-Breadcrumbs ½ Cup

-Lehsan paste (Garlic paste) 1 tbs

-Paprika powder 1 tsp

-Zeera powder (Cumin powder) 1 tsp

-Namak (Salt) 1 tsp or to taste

-Kali mirch powder (Black pepper powder) ½ tsp

-Cayenne powder 1 tsp

-Dhania powder (Coriander powder) 1 tsp

-Baking soda ½ tsp

-Lemon juice 1 & ½ tbs

-Fresh parsley chopped ½ Cup

-Cooking oil 2-3 tbs

-Pyaz (Onion) 2 medium

-Tamatar (Tomatoes) 2 medium

-Hari mirch (Green chillies) large 3

-Hari mirch (Green chillies) thin 3

Prepare Tahini Yogurt Sauce:

-Dahi (Yogurt) hung 1 Cup

-Cream 1-2 tbs

-Tahini paste 3-4 tbs

-Lehsan paste (Garlic paste) 1 tsp

-Zeera (Cumin seeds) roasted & crushed ¼ tsp

-Lal mirch (Red chilli) crushed ¼ tsp

-Namak (Salt) ¼ tsp or to taste

-Olive oil ½ tbs (optional)



Prepare Kofta Kebab:

-In a chopper,add beef,onion,breadcrumbs,garlic paste,paprika powder,cumin powder,salt,black pepper powder,cayenne powder,coriander powder,baking soda,lemon juice & chop until well combined.

-In a bowl,add beef mixture,add fresh parsley & mix well.

-With the help of greased hands,take a small quantity of mixture (50g) & make a smooth ball,press to make a flat patty & make finger impressions on both sides (makes 17-18).

-In a cast iron pan,add cooking oil and fry kofta kababs on low flame from both sides until brown (6-7 minutes).

-Grease cast iron pan with cooking oil,add onion,tomatoes,green chillies large & green chillies thin and grill on medium flame until golden (2-3 minutes) & set aside.

Prepare Tahini Yogurt Sauce:

-In a bowl,add yogurt,cream,tahini paste,garlic paste,cumin seeds,red chilli crushed,salt & whisk well.

-Add olive oil,whisk well & set aside.

-Serve kofta kebab with saffron butter rice,grilled vegetables & tahini yogurt sauce!
