Ingredients:

  • Aloo (Potatoes) boiled & peeled ½ kg (room temperature)
  • Lal mirch powder (Red chili powder) 1/2 tsp or to taste
  • Haldee powder (Turmeric powder) 1/4 tsp
  • Zeera powder (Cumin powder) 1 tsp
  • Namak (Salt) 1/2 tsp or to taste
  • Chaat masala 1/2 tsp
  • Adrak lehsan (Ginger garlic) freshly chopped 1/2 tbs
  • Breadcrumbs 1/4 cup
  • Maida (All-purpose flour) 1/2 cup
  • Gajar (Carrot) shredded 1/4 cup
  • Shimla mirch (Capsicum) finely chopped 2 tbs
  • Hari mirch (Green chili) chopped 1 tbs
  • Hara dhania (Fresh coriander) chopped 1-2 tbs
  • Cooking oil for frying
  • Cooking oil 5-6 tbs
  • Pyaz (Onion) sliced 1 large
  • Adrak (Ginger) 1 inch piece
  • Lehsan (Garlic) 4-5 cloves
  • Kaju (Cashew nuts) 8-10
  • Nestle milkpak yogurt 1 cup
  • Zeera (Cumin seeds) 1 tsp
  • Laung (Cloves) 3-4
  • Hari elaichi (Green cardamom) 2
  • Darchini (Cinnamon stick) 1
  • Tamatar (Tomato) pureed ½ Cup
  • Garam masala powder 1 tsp
  • Namak (Salt) 1 tsp or to taste
  • Dhania powder (Coriander powder) 1/2 tbs
  • Haldee powder (Turmeric powder) 1/4 tsp
  • Lal mirch powder (Red chili powder) 1 tsp or to taste
  • Pani (Water) 1 cup or as required
  • Hara dhania (Fresh coriander) chopped

Directions:

In bowl,grate potatoes with the help of the grater.

Add red chili powder,turmeric powder,cumin powder,salt,chaat masala,ginger garlic,breadcrumbs,all-purpose flour and mix until well combined.

Add carrot,capsicum,green chili,fresh coriander and mix well.

Grease hands with cooking oil,take a mixture and makes koftay of equal sizes (makes 16).

In wok,heat cooking oil and fry on medium low flame until golden brown.

In wok,add cooking oil,onion and fry until golden brown.

Add ginger,garlic,cashew nuts and mix well for 1 minute then take out in a bowl.

In grinder,add fried onion+cashew nuts and chop well.

Add yogurt and grind to make a paste & set aside.

In the same wok,add cumin seeds,cloves,green cardamom,cinnamon stick and mix well.

Add tomato puree,mix well and cook for 2 minutes.

Now add yogurt & onion puree,mix well and cook for 2-3 minutes.

Add garam masala powder,salt,coriander powder,turmeric powder,red chili powder,mix well and cook for 4-5 minutes.

Add water,mix well and bring it to boil,cover and cook on low flame for 8-10 minutes then cook on high flame until oil separates.

In serving dish,add fried koftay and pour gravy.

Garnish with fresh coriander & serve!
