Ingredients:
Prepare Chicken Tikka Marination:
-Chicken (Thigh Boneless) 500g
-Dahi (Yogurt) Hung 2 tbs
-Lemon Juice 2 tbs
-Adrak & Lehsan (Ginger & Garlic) Crushed 2 tsp
-Zeera (Cumin) Roasted Crushed 1 tsp
-Kashmiri Lal Mirch Powder 2 tsp
-Haldi (Turmeric) Powder ½ tsp
-Lal Mirch (Red Chilli) Powder 1 tsp
-Himalayan Pink Salt 1 tsp or to taste
-Dhania (Coriander) Powder 1 tsp
-Tikka Masala 2 tsp
-Kasuri Methi (fenugreek leaves) ½ tbs
-Cooking Oil 1tbs
-Cooking oil (for Grilling) 2 tbs
Red Shawarma Sauce:
-Lal Mirch (Red Chilli) Crushed (Soaked) 2tbs
-Himalayan Pink Salt ½ tsp
-Lemon Juice 1 tbs
-Soy Sauce ¼ Cup
-Tomato Ketchup ¼ Cup
-Pyaz (Onion) roughly chopped 1 medium
-Lehsan (Garlic) Cloves 6-7
-Cooking Oil 2 tbs
White Shawarma Sauce:
-Mayonnaise ½ Cup
-Dahi (Yoghurt) ½ Cup
-Lemon Juice 1 & ½ tbs
-Lehsan (Garlic) Cloves 5
-Til (Sesame Seeds) Roasted 2 tbs
-Kali Mirch (Black Pepper) Powder ½ tsp
-Himalayan Pink Salt ½ tsp
-Oregano ½ tbs
Assembling:
-Wrapster Tortillas (28 centimeters)
-Fries as required
-Pyaz (Onion) julienne as required
-Tomatoes (half slices) as required
-Iceberg lettuce (roughly cut) as required
-Jalapenos (slices) as required
Directions:
Red Shawarma Sauce:
-In a blending jar add red chilli crushed (soaked in hot water), pink salt, lemon juice, soy sauce, tomato ketchup, onion, garlic cloves, and cooking oil.
-Blend well to make smooth paste and set aside.
White Shawarma Sauce:
-Add mayonnaise, yogurt, lemon juice, garlic cloves, sesame seeds, black pepper, pink salt, and oregano in a blender.
-Blend well until paste forms. Now white shawarma sauce is ready, keep it aside.
Prepare Chicken Tikka Marination:
-Add chicken thigh fillets (for juicy shawarma), yogurt, lemon juice, ginger & garlic, cumin, Kashmiri red chilli, turmeric, red chilli, pink salt, coriander powder, tikka masala, fenugreek leaves, and cooking oil in a bowl.
-Mix with hand and marinate for atleast 30 minutes.
-In a grill pan, add cooking oil and heat it.
-Fry marinated chicken on medium flame for maximum 5-6 minutes each side.
-Take the chicken to cutting board and roughly cut into strips.
Assembling:
-On the cutting board add Wrapster’s Tortilla, and spread some red sauce.
-In the center, add chicken strips, fries, onion, tomatoes, iceberg lettuce, and jalapenos.
-Now add white shawarma sauce, and fold it.
-Take grill pan grease with oil, heat it, and grill wraps.
-Serve with red and white shawarma sauce.
