Ingredients:
Prepare Yogurt Green Sauce:
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Lehsan (Garlic) 2 cloves
-Hari mirch (Green chilli) 1-2
-Dahi (Yogurt) ¼ Cup
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Iodized Himalayan pink salt ½ tsp or to taste
Prepare Cheese Filling:
-Cheddar cheese grated 100g
-Cream 3 tbs
-Hara dhania (Fresh coriander) chopped 1 tbs
Prepare Chicken Reshmi Kabab:
-Boiling water as required
-Pyaz (Onion) 1 large
-Boneless chicken 1 kg (Use mix of breast & Thigh pieces)
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Hari mirch (Green chillies) chopped 4-5
-Kaju powder (Cashew powder) 3 tbs
-Bhunay chanay (Roasted gram) powder ¼ Cup
-Zeera powder (Cumin powder) 1 tsp
-Elaichi powder (Cardamom powder) ½ tsp
-Kasuri methi (Dried fenugreek leaves) 1 tbs
-Iodized Himalayan pink salt 2 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Cream 2 tbs
-Ghee (Clarified butter) 2 tbs
-Dahi (Yogurt) 1-2 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Cooking oil ½ Cup
Direction:
Prepare Yogurt Green Sauce:
-In a spice mixer,add fresh coriander,mint leaves,garlic,green chillies,yogurt,cumin seeds,pink salt & blend well.Yogurt green sauce is ready!
Prepare Cheese Filling:
-In a bowl,add cheddar cheese,cream,fresh coriander & mix well.Cheese filling is ready!
Prepare Chicken Reshmi Kabab:
-In boiling water,add onion & blanch for 3 minutes then strain & set aside.
-In a chopper,add chicken,fresh coriander,mint leaves,green chillies,blanched onion,cashew powder, roasted gram powder,cumin powder,cardamom powder,dried fenugreek leaves,pink salt,black pepper powder,white pepper powder,cream,clarified butter,yogurt,ginger garlic paste,chop well & refrigerate for 30 minutes.
-Grease hands with cooking oil,take 70g of chicken mixture,flatten it,add cheese filling (1 tbs) & cover properly to make a kabab (makes 12).
-Can be stored for up to 1 month in freezer.
-In frying pan,heat cooking oil & shallow fry on medium flame until golden.
-Serve with prepared yogurt green sauce!

-Spice mixer mein daalein hara dhania,pudina,lehsan,hari mirch,dahi,zeera aur pink salt,phir blend karein.Yogurt green sauce tayar hai!
Prepare Cheese Filling:
-Ek bowl mein daalein cheddar cheese,cream,hara dhania aur mix karein.Cheese filling tayar hai!
Prepare Chicken Reshmi Kabab:
-Ubltay hue paani mein pyaz daalein aur 3 minutes tak blanch karein,phir chaan kar side par rakh dein.
-Chopper mein daalein chicken,hara dhania,pudina,hari mirch,blanched pyaz,kaju powder,bhuna chana powder,zeera powder,elaichi powder,kasuri methi,pink salt, kali mirch powder,white pepper powder,cream,ghee,dahi aur adrak lehsan paste,achhi tarah chop karein aur 30 minutes ke liye refrigerate karein.
-Haath cooking oil se grease karein,70g chicken mixture le kar flatten karein,1 tbs cheese filling daalein aur achhi tarah band karke kabab bana lein (total 12 kabab).
-1 month tak freezer mein store kiye ja sakte hain.
-Frying pan mein cooking oil garam karein aur medium flame par shallow fry karein jab tak golden ho jayein.
