Prepare Kababs:

-Boneless beef cubes 600g (lean)

-Baisan (Gram flour) roasted 4 tbs

-Pyaz (Onion) fried ½ Cup

-Hari mirch (Green chillies) 3-4

-Himalayan pink salt 1 tsp or to taste

-Garam masala powder 1 tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Zeera (Cumin seeds) roasted & crushed 2 tsp

-Haldi powder (Turmeric powder) ¼ tsp

-Dhania powder (Coriander powder) 1 tsp

-Adrak lehsan (Ginger garlic) crushed 1 tbs

-Hara dhania (Fresh coriander) handful

-Nurpur Butter salted 1-2 tbs

-Cooking oil 4-5 tbs

Prepare Gravy:

-Nurpur Butter salted 1-2 tbs

-Zeera (Cumin seeds) 1 tsp

-Hari elaichi (Green cardamom) 2

-Laung (Cloves) 2-3

-Darchini (Cinnamon sticks) 2-3

-Pyaz (Onion) chopped 3 medium

-Adrak lehsan (Ginger garlic) crushed 1 tbs

-Hari mirch (Green chilli) paste 2 tbs

-Tamatar (Tomatoes) pureed 3 medium

-Dahi (Yogurt) ½ Cup

-Cream ½ Cup

-Kashmiri lal mirch (Kashmiri red chilli) powder 2 tsp

-Sabut dhania (Coriander seeds) crushed 2 tsp

-Haldi powder (Turmeric powder) ½ tsp

-Lal mirch (Red chilli) crushed 1 tsp

-Himalayan pink salt 1 tsp or to taste

-Lemon juice 2 tsp

-Water ¼ Cup or as required

-Water ½ Cup or as required

-Hara dhania (Fresh coriander) chopped 1 tbs

-Nurpur Butter salted 50-60g

-Hari mirch (Green chillies) julienne 2-3

-Adrak (Ginger) julienne 1-inch piece

-Tamatar (Tomato) deseeded & diced 1 medium

-Pyaz (Onion) diced 1 medium

-Shimla mirch (Capsicum) diced 1 medium

-Himalayan pink salt to taste

-Adrak (Ginger) julienne

-Hara dhania (Fresh coriander) chopped



Prepare Kababs:

-In a chopper,add beef,gram flour,fried onion,green chillies,pink salt,garam masala powder,red chilli powder,cumin seeds,turmeric powder,coriander powder,ginger garlic crushed,fresh coriander,butter & chop until well combined.

-With the help of greased hands,take small quantity of mixture (45g),make kabab of equal sizes & insert wooden skewer to make a hole (makes 15-16).

-In a wok,heat cooking oil & shallow fry kababs on low flame from all sides until golden.

Prepare Gravy:

-In the same wok,add butter & let it melt.

-Add cumin seeds,green cardamom,cloves,cinnamon sticks & mix well.

-Add onion,mix well & sauté for 1-2 minutes.

-Add ginger garlic crushed,green chilli paste & mix well.

-Add pureed tomatoes,mix well & cook on medium flame for 6-8 minutes.

-In a bowl,add yogurt,cream,red chilli powder,coriander seeds,turmeric powder,red chilli crushed,pink salt,lemon juice & whisk well.

-In a wok,add spiced yogurt & mix well.

-Add water & mix well,cover & cook on low flame for 8-10 minutes.

-Add water & mix well.

-Add fried kababs & mix well,cover & cook on low flame for 15-20 minutes.

-Add fresh coriander & mix well.

-In a frying pan,add butter & let it melt.

-Add green chillies,ginger,tomato,onion,capsicum & mix well.

-Add pink salt & sauté for a minute.

-In a wok,add sautéed vegetables & give it a good mix.

-Garnish with ginger,fresh coriander & serve!
