Ingredients:
Prepare Crispy Bhindi:
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Haldi powder (Turmeric powder) 1 tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Chaat masala 1 & ½ tsp
-Bhindi (Okra) 300g
-Besan (Gram flour) 3 tbs or as required
-Chawal ka atta (Rice flour) 1 tbs
-Cooking oil for frying
-Chawal (Rice) boiled
-Achar (Pickle)
Prepare Hari Moong Daal:
-Adrak (Ginger) 1-inch piece
-Lehsan (Garlic) 3-4ncloves
-Hari mirch (Green chillies) 2-3
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Sabut moong daal (Green gram whole) soaked ¾ Cup
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Water 3 Cups or as required
-Water 1 Cup
-Iodized Himalayan pink salt to taste
-Imli pulp (Tamarind pulp) 3 tbs or as required
Prepare Tadka:
-Cooking oil 3 tbs
-Lehsan (Garlic) sliced 1 tsp
-Sukhi lal mirch (Dry red chillies) 2-3
-Zeera (Cumin seeds) 1 tsp
Directions:
Prepare Crispy Bhindi:
-In a jar,add red chilli powder,coriander seeds,turmeric powder,pink salt,chaat masala,cover & shake well.
-Cut okra from top then cut into julienne.
-In a bowl,add okra,add prepared spice mix,cover,shake well & let it rest for 10 minutes.
-Add gram flour,rice flour,cover & shake well.
-In a wok,heat cooking oil & fry on medium flame until golden & crispy.
Prepare Hari Moong Daal:
-In a mortar pestle,add ginger,garlic,green chillies,fresh coriander,mint leaves,crush coarsely & set aside.
-In a pot,add whole green gram,crushed spice mixture,red chilli powder,turmeric powder & water.
-Turn on the flame,mix well & bring it to boil,cover & cook on low flame until tender (15-20 minutes).
-Turn off the flame & mash slightly.
-Turn on the flame,add water & mix well.
-Add pink salt,tamarind pulp,mix well & bring it to boil, cook on low flame until desired consistency (4-5 minutes).
Prepare Tadka:
-In tadka pan,add cooking oil & heat it.
-Add garlic,dry red chilli,cumin seeds,mix well & fry until golden.
-Pour tadka in daal,mix well & serve!
Assembling:
-In a serving bowl,add boiled rice,prepared daal,crispy bhindi,kachumar raita,achar & serve!

Directions:
Prepare Crispy Bhindi:
-Jar mein lal mirch powder, dhania dana, haldi powder, pink namak aur chaat masala daal kar shake karen.
-Bhindi ka sirah kaat kar julienne cut karen.
-Bowl mein bhindi daal kar masala mix daalain, shake karen aur 10 minute rest karen.
-Besan aur chawal ka atta daal kar dobara shake karen.
-Karahi mein tel garam kar ke medium flame par golden aur crispy hone tak fry karen.
Prepare Daal:
-Sil batta par adrak, lehsan, hari mirchain, hara dhania aur podina dardara kut len.
-Pateele mein sabut moong daal, yeh kutta hua masala, lal mirch powder, haldi powder aur paani daal kar flame on karen.
-Mix karen, boil aane dein aur dhak kar dhimi aanch par 15-20 minute tak pakayen.
-Flame off karke halka sa mash karen.
-Dobara flame on karen, paani daal kar mix karen.
-Pink namak aur imli ka pulp daal kar mix karen.
-Boil aane dein aur dhak kar 4-5 minute tak desired consistency tak pakayen.
Prepare Tadka:
-Tadka pan mein tel garam karen.
-Lehsan, sukhi lal mirch aur zeera daal kar golden hone tak fry karen.
-Daal mein tadka daal kar mix karen.
Assembling:
-Serving bowl mein chawal daal kar upar daal, crispy bhindi, kachumar raita aur achar rakh kar serve karen.
