Ingredients:
Prepare Imli Ki Meethi Chutney:
-Gur (Jaggery) crushed ½ Cup or as required
-Imli pulp (Tamarind pulp) ¾ Cup
-Kali mirch powder (Black pepper powder) ¼ tsp
-Iodized Himalayan pink salt ¼ tsp or to taste
-Lal mirch powder (Red chilli powder) ¼ tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Kala namak (Black salt) ½ tsp
-Sonth powder (Dried ginger powder) 1 tsp
-Water ¼ Cup or as required
Prepare Green Chutney:
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Lehsan (Garlic) 3-4 cloves
-Hari mirch (Green chillies) 4-5
-Zeera (Cumin seeds) ½ tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Lemon juice 1 & ½ tbs
-Water ¼ Cup or as required
Prepare Aloo Chanay:
-Aloo (Potatoes) boiled 2 medium
-Chanay (Chickpea) boiled 1 Cup (with ½ Cup chickpea water)
-Chaat masala 1 tsp
-Sabut dhania (Coriander seeds) roasted & crushed 1 tsp
-Iodized Himalayan pink salt ¼ tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tsp
-Chicken powder 1 tsp
-Imli pulp (Tamarind pulp) 1-2 tbs
-Hara dhania (Fresh coriander) chopped 1 tbs
Prepare Xl Nachos (Papdi):
-Maida (All-purpose flour) sifted 2 Cups
-Ajwain (Carom seeds) ½ tsp
-Iodized Himalayan pink salt 1 tsp or to taste
-Zeera (Cumin seeds) ½ tsp
-Desi Ghee (Clarified butter) 2 tbs
-Water ¾ Cup or as required
-Cooking oil for frying
Assembling:
-Chaat masala
-Pyaz (Onion) chopped
-Tamatar (Tomato) chopped
-Lemon juice
-Lal mirch (Red chilli) crushed
-Hara dhania (Fresh coriander) chopped
-Chuqandar (Beetroot) grated
-Sev nimco
Directions:
Prepare Imli Ki Meethi Chutney:
-In a saucepan,add jaggery,tamarind pulp,black pepper powder,pink salt,red chilli powder,cumin powder,black salt,dried ginger powder & water,turn on the flame,mix well,bring it to boil & continue cooking until jaggery melts & sauce thickens on medium flame for 2-3 minutes.
-Let it cool.
-Imli ki meethi chutney is ready!
Prepare Aloo Chanay:
-In saucepan,add potatoes,boiled white chickpea with water & mix well.
-Add chaat masala,coriander seeds,pink salt,kashmiri red chilli powder,chicken powder,tamarind pulp, mix well & bring it to boil,cook on medium flame for 1-2 minutes & slightly mash with the help of masher.
-Add fresh coriander & mix well.Aloo chanay is ready!
Prepare Xl Nachos (Papdi):
-In a bowl,add all-purpose flour,carom seeds,pink salt,cumin seeds,clarified butter & mix well until it crumbles.
-Gradually add water,mix well & knead until hard dough is formed,cover & let it rest for 15-20 minutes.
-Knead dough again until smooth.
-Take a dough ball & roll out with the help of rolling pin (use dry flour if needed) then cut into triangle shape (6 inches) with the help of dough cutter & prick with fork (makes 7-8).
-In a wok,heat cooking oil & fry on low flame until golden & crispy.
Assembling:
-On papdi,add prepared green chutney,aloo chana mix,chaat masala, whisked yogurt,imli ki meethi chutney,green chutney,onion,tomato,lemon juice,chaat masala,red chilli crushed,fresh coriander, beetroot & serve!
