Ingredients:
Prepare Wontons:
-Chicken qeema (Mince) 250g
-Adrak (Ginger) chopped ½ tbs
-Lehsan (Garlic) chopped 1 tbs
-Himalayan pink salt ½ tsp or to taste
-Kali mirch (Black pepper) powder ½ tsp
-Oyster sauce 1 tbs
-Soy sauce 1 & ½ tbs
-Hara pyaz (Spring onion) chopped 1 Cup
-Water 3-4 tbs
-Maida (All purpose flour) sifted 2 Cups
-Himalayan pink salt ½ tsp
-Water ¾ Cup or as required
Prepare Soup:
-Chicken yakhni (Stock) 2 litres
-Safed mirch (White pepper) powder ¼ tsp
-Himalayan pink salt to taste
-Sirka (Vinegar) 1 tsp
-Soy sauce 1 tsp
-Til ka tel (Sesame oil) ½ tsp
-Bok choy 1 medium
-Glass noodles as required
-Chilli oil to taste
-Hara pyaz (Spring onion) leaves chopped
Directions:
Prepare Wontons:
-In a bowl,add chicken mince,ginger,garlic,pink salt,black pepper powder,oyster sauce,soy sauce,spring onion & gradually add water,mix until well combined & set aside.
-In a bowl,add all-purpose flour,pink salt & mix well.
-Gradually add water,mix well & knead until hard dough is formed,cover with cling wrap & let it rest for 30 minutes.
-Remove the cling wrap,knead dough again for 2-3 minutes,cover with cling wrap & let it rest for 10 minutes.
-Knead dough again until smooth then divide the dough into two portions,take one portion & make a ball,sprinkle cornflour & roll out as thin as possible with the help of a rolling pin.
-Cut 3x3 inches square wonton wraps from the rolled dough.
-Use cornflour for dusting to avoid stickiness.
-Take one wonton wrap,add prepared filling (1 tsp) & apply water on the edges.
-Fold the wrap into a triangle & seal the edges then bring two corners together & pinch to form a triangular-shaped wonton (makes 40-45).
Prepare Soup:
-In a pot,add chicken stock & bring it boil.
-Add white pepper powder,pink salt,vinegar,soy sauce,sesame oil & mix well.
-Add bok choy,prepared wontons (18-20 pieces),mix well & bring it to boil,cover & cook on low flame for 6-8 minutes & stir gently.
-In a bowl,add glass noodles,prepared wonton soup,bok choy,chilli oil,spring onion leaves & serve!
Note:
-Add halved bok choy along with wontons as it takes 6-8 minutes to cook.
-If you want to add chopped bok choy, add them at the end of cooking as it takes 2-3 minutes to cook.
