Stuffed Masala Lauki

  • Lauki (Bottle gourd) 2 medium
  • Boiling water as required
  • Namak (Salt) ½ tsp
  • Haldi powder (Turmeric powder) ¼ tsp
  • Aalo (Potatoes) boiled & grated 250g
  • Cottage cheese grated 150g
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Namak (Salt) ¼ tsp or to taste
  • Kaju powder (Cashew powder) 2 tbs
  • Hara dhania (Fresh coriander) chopped 1-2 tbs
  • Hari mirch (Green chilli) chopped ½ tbs
  • Cooking oil 2-3 tbs
  • Cooking oil 1-2 tbs
  • Kaju (Cashew nuts) 9-10
  • Pyaz (Onion) sliced 1 large
  • Adrak (Ginger) sliced 1 inch piece
  • Lehsan (Garlic) cloves 3-4
  • Hari mirch (Green chilli) 1
  • Tamatar (Tomatoes) cubes 3 medium
  • Cooking oil 2-3 tbs
  • Laung (Cloves) 2
  • Badi elaichi (Black cardamom) 1
  • Zeera (Cumin seeds) ½ tbs
  • Dahi (Yogurt) whisked 1 Cup
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Haldi powder (Turmeric powder) ½ tsp
  • Dhania powder (Coriander powder) 1 & ½ tsp
  • Namak (Salt) 1 tsp or to taste
  • Khopra (Desiccated coconut) 1 tbs
  • Zeera powder (Cumin powder) 1 tsp
  • Cream
  • Hara dhania (Fresh coriander) chopped


Peel bottle gourd with the help of peeler & cut into ½ inch thick slices and remove the center part (pith) of slices with the help of a round cutter & set aside.

In boiling water,add salt,turmeric powder & mix well.

Add bottle gourd slices,cover & blanch on low flame for 5-6 minutes & set aside for later use.

In a bowl,add boiled & grated potatoes,grated cottage cheese,red chilli powder,salt,cashew nut powder,fresh coriander,green chilli & mix until well combined.

Spread blanched bottle gourd slices on a clean board,fill the center part with the prepared stuffing.

In a frying pan,heat cooking oil and fry stuffed bottle gourd slices on medium flame from both sides until golden brown & set aside.

In a sauce pan,add cooking oil,cashew nuts & fry until light golden.

Add onion,ginger,garlic,green chilli,mix well & sauté until onions are translucent.

Add tomatoes and mix well,cover & cook on low flame for 6-8 minutes.

Turn off the flame and blend well with the help of hand blender & set aside.

In a wok,add cooking oil,cloves black cardamom,cumin seeds & mix well.

Add onion & tomato mixture and mix well.

Add yogurt & mix well.

Add red chilli powder,turmeric powder,coriander powder,salt,desiccated coconut,cumin powder and mix well,cover & cook on medium flame until oil separates (8-10 minutes).

In a serving dish,place fried stuffed bottle gourd slices and pour prepared gravy on top.

rizzle cream,garnish with fresh coriander & serve!
