Ingredients:

-Olper’s Tarrka Desi Ghee 2 tbs

-Gond (Edible gum) ½ Cup

-Olper’s Tarka Desi Ghee 2 tbs

-Kamarkas (Flame of the forest) ¼ Cup

-Olper’s Tarrka Desi Ghee 1 tbs

-Badam (Almonds) 1 Cup

-Pista (Pistachios) ½ Cup

-Kaju (Cashew nuts) ½ Cup

-Akhrot (Walnuts) ½ Cup

-Char maghaz (Melon seeds) 1/3 Cup

-Phool makhanay (Lotus seeds) 2 & ½ Cups (100g)

-Mong Daal (Yellow lentil) 500g

-Olper’s Tarrka Desi Ghee 1 Cup

-Stevia or Low-calorie sweetener 1 tbs

-Fried nuts

-Sugar ½ Cup

-Fried nuts

 

Directions:

-In a wok,add desi ghee & let it melt.

-Add edible gum,mix well & fry on low flame until it puffs up (keep stirring in between) & set aside.

-In the same wok,add desi ghee & let it melt.

-Add flame of the forest & fry on medium flame for 2-3 minutes then take out in the same bowl.

-In the same wok,add desi ghee & let it melt.

-Add almonds & fry for a minute.

-Add pistachios,cashew nuts,walnuts,melon seeds,mix well & fry for 1-2 minutes.

-Let it cool then chop well & set aside.

-In the same wok,add lotus seeds & dry roast until crispy (2-3 minutes).

-In a chopper,add roasted lotus seesd,chop well & set aside.

-In a grinder,add yellow lentil,grind to make powder.

-In a wok,add ground yellow lentil & dry roast on medium flame until fragrant (8-10 minutes).

-Add desi ghee,mix well & cook on low flame for 9-10 minutes.

-Add ground lotus seeds,mix well & cook on low flame for 8-10 minutes.

-Add ground nuts,mix well & cook on low flame for 8-10 minutes.

-Let it cool.

Sugar Free:

-In a jar,add 250g of panjeeri,stevia & mix well.

-Add fried nuts & give it a good mix.

With Sugar:

-In a grinder,add sugar & grind to make powder.

-In remaining panjeeri,add powdered sugar & mix well.

- Add fried nuts & give it a good mix.

-Can be stored in an airtight container for up to 1 month on counter & up to 6 months in refrigerator (yield: 1.5kg).

Suggested Serving:

-Consume 3-4 tbs with any hot beverage in a day.
