Ingredients:
- Karela (Bitter gourd) 1 kg
- Namak (Salt) 1 & ½ tbs
- Cooking oil for frying
- Cooking oil ½ Cup
- Pyaz (Onion) sliced ½ kg
- Lehsan paste (Garlic paste) ½ tbs
- Tamatar (Tomato) cubes 3 medium
- Hari mirch (Green chillies) 5-6
- Zeera (Cumin seeds) roasted & crushed ½ tbs
- Namak (Salt) ½ tsp or to taste
- Haldee powder (Turmeric powder) 1 tsp
- Dhania powder (Coriander powder) 2 tsp
- Lal mirch powder (Red chilli powder) 2 tsp or to taste
- Kary (Raw mango) peeled & cubes ½ Cup
- Garam masala powder ½ tbs
- Hara dhania (Fresh coriander)
Directions:
Peel & deseed bitter gourd then chop into small pieces with the help of the knife.
On strainer,add bitter gourd,salt and mix well,cover and let it rest for 30 minutes then wash thoroughly 3-4 times and squeeze to remove excess water.
In frying pan,heat cooking oil and fry bitter gourd until golden brown and crispy & set aside.
In wok,add cooking oil,onion and fry until light golden.
Add garlic paste and mix well.
Add tomatoes,green chilllies and mix well.
Add cumin seeds,salt,turmeric powder,coriander powder,red chili powder,mix well and cook for 2-3 minutes.
Add raw mango and mix well.
Cover and cook on low flame for 5 minutes then cook on high flame for 2-3 minutes.
Now add fried bitter gourd and mix well.
Add garam masala powder,cover and cook on low flame for 15-20 minutes.
Add fresh coriander,mix & serve!

Karelay ko peel ker ka deseed ker lein phir knife ki madad sa small pieces mein cut ker lein.
Strainer mein karelay aur namak dal ker ache tarhan mix ker lein aur dhak ker 30 minutes kliya rakh dein phir pani sa ache tarhan dho lein aur ache tarhan squeeze ker lein.
Frying pan mein cooking oil garam karein aur karelay golden brown & crispy hunay tak fry ker lein & side per rakh dein.
Karhai mein cooking oil aur pyaz dal dein aur light golden hunay tak fry ker lein.
Lehsan paste dal ker ache tarhan mix ker lein.
Tamatar aur hari mirch dal ker ache tarhan mix karein.
Zeera,namak,haldee powder,dhania powder aur lal mirch powder dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Kary dal ker ache tarhan mix ker lein.
Dhak dein aur halki ancch per 5 minutes kliya paka lein phir tez ancch per 2-3 minutes kliya paka lein.
Ab fried karelay dal ker ache tarhan mix ker lein.
Garam masala powder dal ker dhak dein aur halki ancch per 15-20 minutes kliya paka lein.
Hara dhania dal ker mix ker lein & serve karein!
