Daal Chawal Platter (Makhni Daal, Keri Achar & Chawal)

Ingredients:

Prepare Instant Achar:

-Keri (Raw mango) 250g

-Himalayan pink salt 1 tbs or to taste

-Haldi powder (Turmeric powder) 1 & ½ tbs

-Sabut dhania (Coriander seeds) 1 tbs

-Zeera (Cumin seeds) 1 tbs

-Methi dana (Fenugreek seeds) 1 tsp

-Rai dana (Mustard seeds) black ½ tbs

-Saunf (Fennel seeds) 1 tbs

-Lehsan (Garlic) 12-15 cloves

-Sukhi lal mirch (Dried red chillies) sliced 8-10

-Rai dana (Mustard seeds) black ½ tbs

-Zeera (Cumin seeds) 1 tsp

-Ajwain (Carom seeds) ½ tsp

-Kalonji (Nigella seeds) 1 tsp

-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tbs

-Sarson ka tel (Mustard oil) 1 Cup

-Sirka (Vinegar) 4 tbs

Prepare Daal Makhni:

-Boiling water 2-3 Cups

-Sabut mash daal (Black gram) 1 & ½ Cup (soaked for 4-5 hours)

-Lal lobia (Red kidney beans) 1/3 Cup (soaked for 4-5 hours)

-Chana daal (Split bengal gram) 1/8 Cup (soaked for 2 hours)

-Darchini (Cinnamon stick) 1

-Tez patta (Bay leaf) 1

-Hari elaichi (Green cardamom) 2

-Himalayan pink salt 1 tsp or to taste

-Haldi powder (Turmeric powder) ½ tsp

-Cooking oil 4 tbs

-Pyaz (Onion) chopped 1 medium

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Tamatar (Tomato) pureed 1 Cup

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Dhania powder (Coriander powder) 1 tsp

-Garam masala powder ½ tsp

-Zeera powder (Cumin powder) ½ tsp

-Kashmiri lal mirch (Kashmiri red chilli) powder) ½ tbs

-Water ¼ Cup or as required

-Cream ¼ Cup

-Kasuri methi (Dried fenugreek leaves) 1 tbs

Prepare Tadka:

-Blue band margarine 3-4 tbs

-Lehsan (Garlic) chopped ½ tsp

-Kashmiri lal mirch (Kashmiri red chilli) powder ¼ tsp

-Cream

Prepare Zeera Rice:

-Cooking oil 2 tbs

-Blue band margarine 2 tbs

-Zeera (Cumin seeds) 1 tsp

-Laung (Cloves) 2

-Darchini (Cinnamon stick) 1

-Pyaz (Onion) sliced 1 small

-Chawal (Rice) sella 4 Cups (soaked for 1 hour)

-Hot water 3 Cups or as required

-Himalayan pink salt ½ tbs or to taste

 

Directions:

Prepare Instant Achar:

-Cut raw mango into julienne & transfer it to a bowl.

-Add pink salt,turmeric powder & mix well,cover & let it rest for 15 minutes.

-In frying pan,add coriander seeds,cumin seeds,fenugreek seeds,mustard seeds,fennel seeds & dry roast on low flame until fragrant.

-Let it cool.

-In mortal & pestle,add roasted spices & crush coarsely.

-Add crushed spices in raw mango & mix well.

-Add garlic,dried red chillies,mustard seeds,cumin seeds,nigella seeds,kashmiri red chilli powder.

-In a saucepan,add mustard oil & bring it to smoke point.

-In a bowl,add heated oil & mix well.

-Add vinegar & mix well.Instant achar is ready!

Prepare Daal Makhni:

-In a boiling water,add black gram,red kidney beans,split gram lentil,mix well,remove scum & bring it to boil.

-Add cinnamon stick,bay leaf,green cardamom,pink salt,turmeric powder & mix well,cover & cook on low flame until tender (30 minutes).

-Remove cinnamon stick,bay leaf & mash slightly with the help of the masher & set aside.

-In a pot,add cooking oil,onion & sauté until translucent.

-Add ginger garlic paste,tomato puree,mix well & cook on medium flame for 2-3 minutes.

-Add red chilli powder,coriander powder,garam masala powder,cumin powder,kashmiri red chilli powder,mix well & cook on medium flame for 1-2 minutes.

-Add water & mix well.

-Add boiled daal mixture,water,pink salt,mix well & cook on medium flame for 4-5 minutes.

-Turn off the flame,add cream,dried fenugreek leaves & mix well.

Prepare Tadka:

-In small frying pan,add margarine & let it melt.

-Add garlic & fry until light golden.

-Turn off the flame,add kashmiri red chilli powder & mix well.

-Now pout tadka in daal & mix well.

-Garnish with cream & serve!

Prepare Zeera Rice:

-In a pot,add cooking oil,margarine & let it melt.

-Add cumin seeds,cloves,cinnamon stick & fry for 30 seconds.

-Add onion & fry on medium flame until light golden.

-Add rice & mix.

-Add hot water,pink salt,mix well & cook on medium flame until water is reduced (2-3 minutes),cover & steam cook on low flame for 10-12 minutes.

-Serve zeera rice with daal makhni & instant achar.
