Ingredients:
-Mutton mix boti 750g
-Dahi (Yogurt) ½ Cup
-Kacha papita (Raw papaya) paste 1 & ½ tbs
-Adrak lehsan (Ginger garlic) crushed 1 tbs
-Himalayan pink salt 1 tsp or to taste
-Lemon juice 1 tbs
-Cooking oil 2 tbs

-Pyaz (Onion) chopped 1 medium
-Hari mirch (Green chilli) chopped 1 tbs
-Tamatar (Tomatoes) pureed 3 medium
-Sabut dhania (Coriander seeds) roasted & crushed ½ tbs
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Cream ¼ Cup
-Kali mirch (Black pepper) crushed ½ tsp
-Adrak (Ginger) julienne 1-inch piece
-Hari mirch (Green chilli) sliced 1-2
-Hara dhania (Fresh coriander) chopped 1 tbs
-Hari mirch (Green chilli) sliced
-Adrak (Ginger) julienne
-Hara dhania (Fresh coriander) chopped
Directions:
-In a pot,add mutton,yogurt,raw papaya paste,ginger garlic,pink salt,lemon juice,cooking oil & mix well,cover & marinate for 30 minutes.
-Turn on the flame,mix well,cover & cook on medium flame until meat is tender (30-40 minutes) & set aside.
-In a wok,add cooking oil,margarine & let it melt.
-Add onion,green chilli,mix well & cook on medium flame for 2-3 minutes.
-Add pureed tomatoes,coriander seeds,cumin seeds,red chilli powder & mix well,cover & cook on low flame for 10-12 minutes then cook on high flame until oil separates.
-Turn off the flame,add cream & mix well.
-Turn on the flame,add cooked mutton & mix well.
-Add black pepper crushed,ginger,green chilli,fresh corinader & mix well,cover & cook on low flame for 2-3 minutes.
-Garnish with green chilli,ginger,fresh coriander & serve!

-Chulha on ker ka ache tarhan mix karein aur dhak ker darmiyani ancch per gosht gul janay tak paka lein (30-40 minutes) & side per rakh dein.
-Karahi mein cooking oil aur margarine dal ker melt ker lein.
-Pyaz aur hari mirch dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Pureed tamatar,sabut dhania,zeera aur lal mirch powder dal ker ache tarhan mix karein aur dhak ker halki ancch per 10-12 minutes kliya paka lein phir tez ancch per oil alag ho janay tak paka lein.
-Chulha bund ker dein aur cream dal ker ache tarhan mix ker lein.
-Chulha on karein aur cooked mutton dal ker ache tarhan mix ker lein.
-Kali mirch crushed,adrak,hari mirch aur hara dhania dal ker mix karein aur dhak ker halki ancch per 2-3 minutes kliya paka lein.
-Hari mirch,adrak aur hara dhania dal ker serve karein!
