Ingredients:
Prepare Filling:
-Cooking oil 1 tbs
-Lehsan (Garlic) chopped 1 tbs
-Hari mirch (Green chilli) chopped ½ tbs
-Pyaz (Onion) chopped 1 large
-Hara pyaz (Spring onion) leaves chopped 1 Cup
-Iodized Himalayan pink salt 1 tsp or to taste
-Lal mirch (Red chilli) crushed ½ tsp
-Sabut dhania (Coriander seeds) roasted & crushed ½ tbs
-Chaat masala ½ tsp
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Aloo (Potato) boiled 1 large
-Hara dhania (Fresh coriander) chopped handful
Prepare Dough:
-Maida (All-purpose flour) sifted 3 Cups
-Iodized Himalayan pink salt 1 tsp or to taste
-Ghee (Clarified butter) 3 tbs
-Water 1 & ½ Cup or as required
-Cooking oil for frying
Directions:
Prepare Filling:
-In frying pan,add cooking oil,garlic,green chilli & sauté for 30 seconds.
-Add onion,mix well & sauté for a minute.
-Add spring onion,pink salt,red chilli crushed,coriander seeds,chaat masala,red chilli powder,turmeric powder,cumin seeds,mix well & cook for 2-3 minutes.
-Add potato,mash well then mix well.
-Add fresh coriander & mix well.
-Let it cool.
Prepare Dough:
-In a bowl,add all-purpose flour,pink salt & mix well.
-Add clarified butter & mix well until it crumbles.
-Gradually add water,mix well & knead until dough is formed,cover & let it rest for 15 minutes.
-Knead dough again until smooth.
-Take a small dough (150g) & make a ball,sprinkle dry flour & roll out into long oval shape.
-Apply clarified butter & dust dry flour,flip both vertical sides,apply clarified butter & dust dry flour than fold the dough from the center.
-Apply clarified butter & dust dry flour than roll out into pinwheel shape then into 3 portions.
-Take one portion,sprinkle dry flour & roll out into 4-inches.
-Place rolled dough in a bowl,add 1-2 tbs of prepared filling,apply water,gather the edges,twist,pinch & seal the ends.
-In a wok,heat cooking oil (120°C) & fry on very low flame until golden & crispy (makes 14-16).
-Serve with green chutney!

-Pyaz dal kar mix karain aur ek minute sauté karain.
-Hara pyaz,pink salt,lal mirch crushed,sabut dhania,chaat masala,lal mirch powder,haldi powder aur zeera dal kar mix karain aur 2-3 minutes tak paka lein.
-Aloo dal kar achi tarah mash karain phir mix karain.
-Hara dhania dal kar mix karain.
-Thanda ker lein.
Prepare Dough:
-Ek bowl mein maida aur pink salt dal kar mix karain.
-Ghee dal kar mix karain jab tak crumbs jaisa texture ban jaye.
-Thora thora pani dal kar dough gundh lein aur cover kar ke 15 minutes rest karne dein.
-Dough ko dobara gundh kar smooth kar lein.
-150g dough la kar ball banayein,maida chirak dein aur long oval shape mein roll out kar lein.
-Ghee laga ker maidai chirak dein aur flip ker ka dono vertical sides fold kar ke phir se ghee aur dry flour lagayein.
-Dough ko center se fold kar ke phir se ghee aur dry flour lagayein.
-Pinwheel shape mein roll kar ke 3 portions mein divide kar lein.
-Ek portion lein,dry flour se dust kar ke 4-inch circle mein roll out kar lein.
-Bowl mein rakh kar 1-2 tbs filling dal kar edges par pani lagayein,edges gather kar ke twist, pinch aur seal kar dein.
-Karahi mein cooking oil (120°C) garam karein aur bohat ancch per golden aur crispy ho janay tak fry ker lein (makes 14-16).
-Hari chutney ke saath serve karain!
