Turkish Style Simit Pizza

Ingredients:

Prepare Dough:

-Warm water ¾ Cup

-Bareek cheeni (Caster Sugar) 1 tbs

-Khameer (Instant yeast 3 tsp

-Bareek cheeni (Caster sugar) 1 tbs

-Himalayan Pink Salt ½ tsp

-Anda (Egg) 1

-Cooking oil 2 tbs

-Maida (All-purpose flour) sifted 3 Cups

-Cooking oil 1 tbs

-Cooking oil 1 tsp

-Til (Sesame seeds) ½ Cup

-Water ½ Cup

-Honey 2 tbs

-Cheddar cheese grated as required

-Mozzarella cheese grated as required

-Sausages sliced

 

Directions:

Prepare Dough:

-In a bowl add warm water, caster sugar, instant yeast, mix well, cover & let it rest for 5 minutes.

-Add caster sugar, pink salt, egg, cooking oil, half quantity of all-purpose flour & mix well until gluten forms.

-Now gradually add remaining flour and mix well until gluten is developed.

-Add cooking oil, mix well & knead until dough is formed.

-Grease the dough with cooking oil, cover & let it proof at warm place for 1 hour or until double in size.

-In a frying pan add sesame seeds & dry roast on low flame for 2-3 minutes or until golden & let it cool.

-In a bowl add water, honey & mix well then set aside.

Prepare Simit Pizza:

-Transfer the dough to a flat surface, sprinkle dry flour & knead the dough.

-Take a small dough (80g) & make a smooth ball, sprinkle flour & roll out in oval shape.

-Stuff with cheddar cheese, pinch & seal the dough then dip it in honey syrup from the flat side than smear the wet side of dough with toasted sesame seeds.

-Place it on a flat surface (sesame seeds coated side upwards), Make a slit in dough with the help of knife & open the pocket & spread slightly.

-Bake it in preheated oven at 180C for 10 minutes.

-Take out from oven, in the pocket, add grated mozzarella cheese, sliced sausages & bake again in preheated oven at 180C for 6-8 minutes or until cheese melts.

-Cut & serve with Turkish tea or sauce (makes 8-9)!
