Pani Wali Phulki

Ingredients:

-Baisan (Gram flour) sifted 1 & ½ Cup

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Baking soda ½ tsp

-Lal mirch (Red chilli) crushed ½ tsp

-Haldi powder (Turmeric powder) ½ tsp

-Ajwain (Carom seeds) ½ tsp

-Namak (Salt) ½ tsp or to taste

-Water ¾ Cup or as required

-Cooking oil for frying

-Lehsan (Garlic) 2 cloves

-Hari mirch (Green chillies) 3-4

-Podina (Mint leaves) 2 tbs

-Hara dhania (Fresh coriander) 2 tbs

-Imli pulp (Tamarind pulp) 1 Cup

-Namak (Salt) ½ tsp or to taste

-Sonth powder (Dried ginger powder) 1 tsp

-Chaat masala 1 tsp

-Kala namak (Black salt) 1 tsp

-Zeera (Cumin seeds) roasted & crushed ¼ tsp

-Water 4-5 Cups or as required

-Pyaz (Onion) rings

-Hari mirch (Green chilli) finely chopped

-Hara dhania (Fresh coriander) chopped

 

Directions:

-In a bowl,add gram flour,red chilli powder,baking soda,red chilli crushed,turmeric powder,carom seeds,salt,water and whisk well for 8-10 minutes,cover and let it rest for 15-20 minutes.

-In a wok,heat cooking oil and fry phulki (pour with the help of spoon) on medium flame until golden brown & crispy.

-In blender jug,add garlic,green chillies,mint leaves,fresh coriander,tamarind pulp,salt,dried ginger powder,chaat masala,black salt,cumin seeds,water and blend well then strain well with the help of strainer.

-Now add fried phulkiyan and soak for 10-12 minutes.

-Add onion rings,green chilli,fresh coriander,mix gently & serve!
