Ingredients:

-Mutton mix boti 750g
-Water 3-4 Cups
-Tez paat (Bay leaves) 1
-Darchini (Cinnamon sticks) 2-3
-Hari elaichi (Green cardamom) 5-6
-Badi elaichi (Black cardamom) 2
-Kali mirch (Black peppercorns) ½ tsp
-Laung (Cloves) 5-6
-Zeera (Cumin seeds) 1 tsp
-Badiyan ka phool (Star anise) 2
-Lehsan (Garlic) cloves 3-4
-Adrak (Ginger) 1-inch piece
-Hari mirch (Green chillies) 3-4
-Himalayan pink salt 1 tsp or to taste
-Hara dhania (Fresh coriander) ½ Cup
-Podina (Mint leaves) 1 Cup
-Ghee (Clarified butter) ½ Cup
-Pyaz (Onion) sliced 2 medium
-Tomato puree ½ Cup
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Hari mirch (Green chilli) paste 1 tbs
-Dahi (Yogurt) whisked 1 Cup
-Lal mirch (Red chilli) crushed 1 tsp
-Dhania powder (Coriander powder) 1 tbs
-Garam masala powder 1 tsp

-Kali mirch powder (Black pepper powder) ½ tsp
-Jaifal powder (Nutmeg powder) ¼ tsp
-Javitri powder (Mace powder) ¼ tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Himalayan pink salt 1 tsp or to taste
-Lemon juice 1-2 tbs
-Aloo (Potatoes) boiled with food color until 3/4th done 3 medium
-Chawal (Rice) 500g boiled until ¾th done

-Kewra water 1 tsp

-Biryani essence 1 tsp

-Orange food color ¼ tsp
-Hari mirch (Green chillies) 2

 

Directions:

-In a cooking pot add mutton,water & bring it to boil,remove scum,add cinnamon sticks,bay leaves, green cardamom,black cardamom,black peppercorns,cloves,cumin seeds,star anise,garlic,ginger,green chillies,pink salt,fresh coriander,mint leaves & mix well,cover & cook on low flame for 30-40 minutes then strain,remove whole spices & reserve stock for later use (2 cups).
-In a cooking pot,add clarified butter & let it melt.

-Add onion,mix well & fry on medium flame until golden.
-Add tomato puree,ginger garlic paste,green chilli paste,mix well & cook for 2-3 minutes.
-Add yogurt,red chilli crushed,coriander powder,garam masala powder,black pepper powder,nutmeg powder,mace powder,pink salt,red chili powder,lemon juice,mix well & cook on medium flame until oil separates (4-5 minutes).
-Add boiled mutton & mix well.
-Now add reserved mutton stock (1 Cup),mix well,cover & cook on medium flame for 4-5 minutes then cook on high flame until oil separates.
-Add potatoes,boiled rice,kewra water,biryani essence,reserved stock (1 Cup),orange food color,green chillies,cover with kitchen cloth & lid and steam cook on low flame for 8-10 minutes.
-Serve with raita & salad.
