-Mutton mix boti 750g

-Water 3 & ½ Cups

-Himalayan pink salt ½ tsp or to taste

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Hari mirch (Green chillies) 4-5

-Badam (Almonds) 12-15

-Khashkhash (Poppy seeds) 2 & ½ tbs washed & dried
-Hari elaichi (Green cardamom) 4-5

-Water ¼ Cup

-Cooking oil ½ Cup

-Darchini (Cinnamon sticks) 2

-Sabut kali mirch (Black peppercorn) 5-6

-Laung (Cloves) 2

-Pyaz (Onion) grated 3 medium

-Tamatar (Tomatoes) coarsely grinded 3 medium

-Adrak lehsan paste (Ginger garlic paste) ½ tbs

-Haldi powder (Turmeric powder) ½ tsp

-Himalayan pink salt ½ tsp or to taste

-Dhania powder (Coriander powder) 1 & ½ tsp

-Lal mirch powder (Red chilli powder) ½ tbs or to taste

-Kali mirch powder (Black pepper powder) ½ tsp

-Dahi (Yogurt) whisked ½ Cup

-Hara dhania (Fresh coriander) chopped

-Adrak (Ginger) julienne


-In pot,add mutton,water & bring it to boil.

-Remove scum,add pink salt,ginger garlic paste,green chillies & mix well,cover & cook on low flame until 90% done (30-35 minutes) (1 & ½ Cup water should remain).

-In spice mixer,add almonds,poppy seeds,green cardamom & grind well.

-Add water,grind well to make a paste & set aside.

-In a pot,add cooking oil,cinnamon sticks,black peppercorns,cloves & mix well.

-Add onion,mix well & cook until light golden.

-Add tomatoes,ginger garlic paste,mix well & cook for 1-2 minutes.

-Add turmeric powder,pink salt,coriander powder,red chilli powder,black pepper powder,mix well & cook for 2-3 minutes.

-Add yogurt,mix well & cook until oil separates.

-Add blended paste & mix well.

-Now add boiled mutton,mix well & bring it to boil,cover & cook on low flame for 12-15 minutes then cook on high flame until oil separates.

-Add fresh coriander & ginger.

-Garnish with fresh coriander,ginger & serve!
