Ingredients:
- Oil ¼ Cup
- Pyaz (Onion) chopped 2 medium
- Anday (Eggs) 4
- Tamatar (Tomatoes) deseeded & chopped 1 & ½ Cups
- Lal mirch (Red chili) crushed 1 & ½ tsp or to taste
- Namak (Salt) 1 tsp or to taste
- Hari mirch (Green chilies) deseeded & chopped 4-5
- Hara dhania (Fresh coriander) chopped ½ Cup
Instant Green Chili Pickle
- Rai dana (Mustard seeds) 1 tsp
- Kalonji (Nigella seeds) 1 tsp
- Saunf (Fennel seeds) 1 tsp
- Zeera (Cumin seeds) 1 tsp
- Sarson ka tel (Mustard oil) ½ Cup
- Meethi dana (Fenugreek seeds) ¼ tsp
- Haldee powder (Turmeric powder) ¼ tsp
- Lehsan (Garlic) crushed 1 tbs
- Namak (Salt) ½ tsp or to taste
- Hari mirch (Green chilies) chopped 1 Cup
- Cheeni (Sugar) 1 pinch
- Lemon juice 2 tbs
Directions:
In wok,add oil,onion and sauté until translucent.
Add eggs one by one,mix well continuously and cook until oil separates.
Add tomatoes,mix well and cook on high flame for 8-10 minutes.
Add red chili crushed,salt and mix well.
Add green chilies and mix well.
-Add fresh coriander and mix well.
Cover and simmer for 4-5 minutes.
Instant Green Chili Pickle
In spice mixer,add mustard seeds,nigella seeds,fennel seeds,cumin seeds and grind or crush coarsely & set aside.
In frying pan,add mustard oil,fenugreek seeds,turmeric powder and mix well.
Add garlic and fry until light golden.
Add ground spices and mix well until fragrant.
Add salt,green chilies and mix well for 2 minutes.
Add sugar and mix well.
Add lemon juice,mix well and cook for 2-3 minutes & serve.

Tamatar dal ker ache tarhan mix karein aur tez ancch per 8-10 minutes kliya paka lein.
Lal mirch crushed aur namak dal ker ache tarhan mix karein.
Hari mich dal ker mix ker lein.
Hara dhania dal ker ache tarhan mix ker lein.
Dhak dein aur 4-5 minutes kliya dum per rakh dein.

Spice mixer mein rai dana,kalonji,saunf aur zeera dal ker coarsely grind or chop ker lein & side per rakh dein.
Frying pan mein sarson ka tel,meethi dana aur haldee powder dal ker ache tarhan mix ker lein.
Lehsan dal ker light golden hunay tak fry ker lein.
Ground spices dal dein aur khusbu anay tak ache tarhan mix ker lein.
Namak aur hari mirchein dal ker 2 minutes kliya ache tarhan mix karein.
Cheeni dal ker mix ker lein.
Lemon juice dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein & serve karein.
