Ingredients:

  • Dahi (Yogurt) 500g
  • Namak (Salt) ½ tsp or to taste

Instant Meethi Chutney:

  • Sugar 2 tbs
  • Lal mirch (Red chilli) crushed 1 tsp
  • Saunf (Fennel seeds) crushed ½ tsp
  • Kala namak (Black salt) 1/4 tsp
  • Sonth (Dried ginger powder) ½ tsp
  • Zeera (Cumin seeds) roasted & crushed ½ tsp
  • Namak (Salt) ½ tsp or to taste
  • Gur (Jaggery) 150g
  • Imli pulp (Tamarind pulp) 1 Cup

Green Chutney:

  • Podina (Mint leaves) ½ Cup
  • Hara dhania (Fresh coriander) ½ Cup
  • Lemon juice 2 tbs
  • Water 2 tbs or as required
  • Namak (Salt) 1/4 tsp or to taste
  • Lehsan (Garlic) cloves 2
  • Hari mirch (Green chilli) 2-3

Prepare Baisan Phulkiyan:

  • Baisan (Gram flour) sifted 1 & ½ Cup
  • Water 3/4 Cup or as required
  • Namak (Salt) ½ tsp or to taste
  • Haldee powder (Turmeric powder) ½ tsp
  • Zeera (Cumin seeds) roasted & crushed ½ tsp
  • Baking powder ½ tsp
  • Lal mirch powder (Red chilli powder) ½ tsp or to taste
  • Cooking oil for frying
  • Warm water as required
  • Lal mirch (Red chilli) crushed
  • Chaat masala
  • Aloo (Potato) boiled & cubed
  • Chanay (Chickpeas) boiled
  • Tamatar (Tomato) deseeded & cubed
  • Pyaz (Onion) chopped
  • Meethi chutney
  • Green chutney
  • Papri

Directions:

In bowl,ad yogurt,salt,whisk well & set aside.

Instant Meethi Chutney:

In blender,add sugar,red chilli crushed,fennel seeds,black salt,dried ginger powder,cumin seeds,salt, jaggery,tamarind pulp,blend well & set aside.

Green Chutney:

In grinder,add mint leaves,fresh coriander,lemon juice,water,salt,garlic,green chilli,grind well & set aside.

Prepare Baisan Phulkiyan:

In bowl,add gram flour,gradually add water and mix continuously for 3-4 minutes.

Add salt,turmeric powder,cumin seeds,baking powder,red chilli powder and mix well.

In wok,heat cooking oil and fry phulkiyan until golden brown.

In bowl,add warm water,phulkiyan and let them soak for 20-25 minutes,take them out,press and squeeze excess water.

Assembling:

In serving dish,add yogurt,phulkiyan,red chilli crushed,chaat masala,potato,chickpeas,tomato,onion, meethi chutney,green chutney,papri,yogurt,meethi chutney,green chutney,red chilli crushed,tomato, papri & serve!
