Crispy Aloo Puri:

  • Maida (All-purpose flour) sifted 2 & ½ Cups
  • Cornflour ¼ Cup
  • Chawal ka atta (Rice flour) ¼ Cup
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Namak (Salt) 1 & ½ tsp or to taste
  • Ajwain (Carom seeds) ½ tsp
  • Hara dhania (Fresh coriander) chopped 1-2 tbs
  • Aloo (Potatoes) peeled & boiled 250g/2 large
  • Water ½ Cup or as required
  • Maida (All-purpose flour) sifted 3-4 tbs
  • Kisan sunflower cooking oil 1 tsp
  • Kisan Sunflower Cooking oil
  • Kisan Sunflower Cooking oil for frying
  • Hara dhania (Fresh coriander) chopped

Achari Aloo ki Tarkari:

  • Kisan Sunflower Cooking oil ¼ Cup
  • Methi dana (Fenugreek seeds) crushed ½ tsp
  • Rai dana (Mustard seeds) ½ tsp
  • Kalonji (Nigella seeds) ½ tsp
  • Zeera (Cumin seeds) 1 tsp
  • Saunf (Fennel seeds) crushed 1 tsp
  • Kashmiri lal mirch powder (Kashmiri red chilli powder) 1 tsp
  • Haldi powder (Turmeric powder) ½ tsp
  • Adrak lehsan paste (Ginger garlic paste) ½ tbs
  • Aloo (Potatoes) peeled & boiled 500g/4 large
  • Namak (Salt) 1 & ½ tsp or to taste
  • Zeera powder (Cumin seeds) ½ tsp
  • Lal mirch (Red chilli) crushed 1 & ½ tsp
  • Water 1 & ½ Cup or as required
  • Imli pulp (Tamarind pulp) 3 tbs
  • Garam masala powder ¼ tsp
  • Hara dhania (Fresh coriander) chopped 1 tbs


Perpare Crispy Aloo Puri:

In a bowl add all-purpose flour,cornflour,rice flour,red chilli powder,salt,carom seeds,fresh coriander & mix well.

Grate boiled potatoes with the help of grater & mix well.

Gradually add water & knead until dough is formed.

Grease dough with cooking oil,cover & let it rest for 5 minutes.

Sprinkle all-purpose flour & knead dough again until smooth.

Grease dough with cooking oil,take a small ball (60g),grease hands with cooking oil & spread the dough with the help of hand then roll out with the help of rolling pin.

In a wok,add cooking oil,heat it (170C) and fry on medium flame until it puffs up & golden (makes 14).

Prepare Achari Aloo ki Tarkari:

In a pot,add cooking oil,fenugreek seeds,mustard seeds,nigella seeds,cumin seeds,fennel seeds & mix well.

Turn off the flame,add Kashmiri red chilli powder,turmeric powder & mix well.

Add ginger garlic paste,turn on the flame & mix well on low flame.

Add potatoes and mash coarsely with the help of masher & mix well.

Add salt,cumin powder,red chilli crushed,mix well & cook for a minute.

Add water,mix well & bring it to boil,cover & cook on medium flame for 3-4 minutes.

Add tamarind pulp,mix well & cook for 2 minutes.

Add garam masala powder,fresh coriander,cover & simmer on low flame for a minute.

Garnish with fresh coriander & serve!

Serve achari aloo ki tarkari with crispy aloo puri.
