Beef Malai Boti Biryani

Ingredients:

-Dahi (Yogurt) whisked ½ Cup

-Kacha papita (Raw papaya) paste 3 tbs

-Adrak lehsan (Ginger garlic) crushed 2 tbs

-Hari mirch (Green chilli) crushed 2 tbs

-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs

-Lal mirch (Red chilli) crushed 1 tsp

-Zeera (Cumin seeds) roasted & crushed 1 tbs

-Khopra (Desiccated coconut) 2 tbs

-Kali mirch powder (Black pepper powder) 1 tsp

-Garam masala powder 1 tsp

-Himalayan pink salt ½ tbs or to taste

-Kasuri methi (Dried fenugreek leaves) ½ tbs

-Olper’s Cream ½ Cup

-Hara dhania (Fresh coriander) chopped 1-2 tbs

-Boneless beef 800g

-Cooking oil 3-4 tbs

-Zeera (Cumin seeds) 1 tbs

-Darchini (Cinnamon sticks) 2

-Laung (Cloves) 5-6

-Hari elaichi (Green cardamom) 3-4

-Badi elaichi (Black cardamom) 1

-Badiyan ka phool (Star anise) 1

-Tez patta (Bay leaf) 1

-Lehsan (Garlic) sliced 1 tbs

-Hari mirch (Green chillies) chopped 5-6

-Pyaz (Onion) sliced 1 large

-Biryani masala 1 & ½ tbs

-Himalayan pink salt ½ tsp or to taste

-Lemon juice 1 & ½ tbs

-Hara dhania (Fresh coriander) 1-2 tbs

-Podina (Mint leaves) 1-2 tbs

-Doodh (Milk) ½ Cup

-Chawal (Rice) sella 600g (soaked & boiled until ¾th done)

-Pyaz (Onion) sliced 1 small

-Hara dhania (Fresh coriander) handful

-Podina (Mint leaves) handful

-Cooking oil ⅓ Cup

-Zarda ka rang (Orange food color) ¼ tsp (dissolved in 1 tbs of water)

-Pyaz (Onion) rings

-Hara dhania (Fresh coriander) chopped

-Lemon slices

 

Directions:

-In a bowl,add yogurt,raw papaya paste,ginger garlic,green chilli,coriander seeds,red chilli crushed, cumin seeds,desiccated coconut,black pepper powder,garam masala powder,pink salt,dried fenugreek leaves,cream,fresh coriander & mix well.

-Add beef & mix well,cover & marinate for 2-3 hours.

-Thread beef pieces into metal skewer (makes 6) & reserve remaining marinade for later use.

-Put skewers on (burning charcoal) bbq grill & grill from all sides until done & basting with cooking oil.

-In a wok,add cooking oil,cumin seeds,cinnamon sticks,cloves,green cardamom,black cardamom,star anise,bay leaf & mix well.

-Add garlic,green chillies,mix well & fry on medium flame until fragrant.

-Add onion,mix well & fry until golden.

-Add reserved marinade,biryani masala,pink salt,lemon juice,fresh coriander,mint leaves,mix well & cook on medium flame until oil separates (2-3 minutes).

-Add milk & mix well,cover & cook on medium flame for 2-3 minutes then cook on high flame until oil separates & set aside.

-In a pot,add half quantity of boiled rice,prepared qorma,onion,fresh coriander,mint leaves,remaining boiled rice,cooking oil,orange food color,cover with kitchen cloth & lid and steam cook on low flame for 10-12 minutes.

-Serve rice with onion rings,prepared malai boti,fresh corinader,lemon slices & serve!
