Ingredients:
Daal Moong Nimco:
- Moong daal (Yellow lentil) 1 & ½ Cups (washed & soaked for 3-4 hours)
- Cooking oil for frying
- Namak (Salt) ½ tsp or to taste
Daal Moth:
- Sabut kali masoor daal (Whole black lentil gram) 1 Cup (washed & soaked for 3-4 hours)
- Cooking oil for frying
- Baisan (Gram flour) sifted 1 & ½ Cups
- Namak (Salt) ½ tsp or to taste
- Haldee powder (Turmeric powder) ¼ tsp
- Cooking oil 2 tbs
- Pani (Water) ¼ Cup or as required
- Cooking oil for frying
- Prepared spice mix 1 tbs or to taste
Nimco Spice Mix:
- Tatri (Citric acid) ½ tsp
- Namak (Salt) 2 tsp or to taste
- Lal mirch powder (Red chili powder) 2 tbs or to taste
Directions:
Daal Moong Nimco:
Soak yellow lentil gram in water for 3-4 hours then strain,spread out evenly on a tray so that all the water is removed and pat dry completely.
In wok,heat cooking oil and fry on low flame for 6-8 minutes or until crispy then strain on kitchen tissue paper and let it dry completely.
In yellow lentil gram,add salt,mix well & serve!
Store in airtight container for up to 2 weeks.
Daal Moth:
Soak whole black lentil gram in water for 3-4 hours then strain,spread out evenly on a tray so that all the water is removed and pat dry completely.
-In wok,heat cooking oil and fry on low flame for 6-8 minutes or until crispy then strain on kitchen tissue paper and let it dry completely.
In bowl,add gram flour,salt,turmeric powder and mix.
Add cooking oil and mix well until crumbled.
Gradually add water and knead until soft dough is formed.
Now use sev maker machine with disk which has tiny small holes and grease sev maker machine with cooking oil,grease hands with oil and take a dough and filled the container with prepared dough and close tightly.As you twist the handle sev will come out from the bottom holes.
In wok,heat cooking oil and fry sev from both sides on low flame until golden & crispy then strain & let it cool completely as it cools it will become crisper then break it and crush it lightly with your hands.
Add fried black lentil gram,prepared spice mix,mix well & serve!
Store in airtight container for up to 2 weeks.
Nimco Spice Mix:
In spice mixer,add citric acid,salt,red chili powder and grind well & set aside.

Karhai mein cooking oil garam karein aur halki ancch per 6-8 minutes or crispy hunay tak fry ker lein phir strain ker ka kitchen tissue paper per pheela lein aur completely dry ker lein.
Fried moong daal mein namak dal ker mix ker lein & serve karein.
2 weeks tak air tight container mein store ker saktay han.

Bowl mein baisan,namak aur haldee powder dal ker mix karein.
Cooking oil dal dein aur crumbled hunay tak ache tarhan mix ker lein.
Thora thora ker ka pani shamil karein aur ghond ker soft dough tayyar ker lein.
Sev nimco machine ko tiny small holes disk ka saath use karein aur sev maker machine ko cooking oil sa grease ker lein,haathon ko oil sa grease karein aur tayyar dough ko la ker container mein dal dein aur tightly close ker lein.
Karhai mein cooking oil garam karein aur sev ko dono sides sa halki ancch per golden & crispy hunay tak fry ker lein phir strain ker ka thanda ker lein aur haathon ki madad sa lightly crush ker lein.
Fried kali masoor daal mein tayyar spice mix dal ker ache tarhan mix kker lein & serve karein.
2 weeks tak air tight container mein store ker saktay han.
