Mango Firni

Ingredients:

  • Aam (Mangoes) 2 Cups
  • Sugar ¼ Cup or to taste
  • Chawal (Rice) ½ Cup (soak for 1 hour, strain & pat dry)
  • Doodh (Milk) 1 & ½ litre
  • Elaichi powder (Cardamom powder) ½ tsp
  • Pista (Pistachios) chopped 1 tbs
  • Badam (Almonds) chopped 1 tbs
  • Olper’s Dairy Cream 4-5 tbs
  • Aam (Mango)
  • Mixed nuts sliced
  • Cherry for garnish

Directions:

In a blender jug,add mangoes & blend to make puree.

In a saucepan,add mango puree,mix well & cook on low flame for a minute.

Add sugar,mix well & cook on low flame until sugar melts (2-3 minutes) & set aside.

In a grinder,add soaked rice,grind coarsely & set aside.

In a wok,add milk & bring it to boil and cook on medium flame for 4-5 minutes.

Add coarsely ground rice,mix well & cook on low flame until it thickens (12-15 minutes) and keep mixing in between.

Turn off the flame,add prepared mango puree & mix well.

Turn on the flame,add cardamom powder,pistachios and almonds,mix well & cook on low flame until it thickens to desired consistency (3-4 minutes).

Turn off the flame,addd cream & mix well.

Turn on the flame & cook on low flame for 2 minutes.

Garnish with mango,mixed nuts,cherry & serve chilled.
