Crispy Milk Donut

Ingredients:

-Doodh (Milk) warm ½ Cup

-Warm water ½ Cup

-Bareek Cheeni (Caster sugar) 2 tbs

-Khameer (instant yeast) 1 tbs

-Anda (Egg) 1

-Vanilla essence 1 tsp

-Maida (All-purpose flour) 3 & ½ Cup

-Iodized Himalayan pink salt ½ tsp

-Bareek Cheeni (Caster sugar) 3 tbs

-Makhan (Butter) Soft 1-2 tbs

-Cooking oil 1-2 tsp

-Dry flour as required

-Maida (All-purpose flour) ½ Cup

-Cornflour 3 tbs

-Sugar powdered 2 tbs

-Baking powder 1 tsp

-Iodized Himalayan pink salt ½ tsp

-Chilled water ½ Cup (add gradually)

-Cooking oil 2 tbs

-Ice cube 1

-Cooking oil (For frying) as required

-Milk powder ½ Cup
-Sugar powdered ½ Cup

 

 

Direction:

-In a bowl, add milk, water, caster sugar, yeast, mix well, cover & rest for 5-10 minutes.

-Remove the cover, add egg, vanilla essence, all-purpose flour (reserve flour for later use) pink salt, & caster sugar.

-Mix well until gluten forms (5-8 minutes).

-Add reserved all-purpose flour, mix well.

-Add butter & knead until dough forms, grease dough with cooking oil.

-Cover & let it proof for 1 hour or until double in size (warm place).

-Now remove the cover, take out the dough from the bowl & place it on the working surface & knead dough again until smooth.

-Take out 65g of dough & make a ball, spread with hands, cut circle from center with the help of (1-inch) cutter & make donut then place on flour-dusted surface.

-Cover with kitchen cloth & let it proof for 15-20 minutes.

-In a bowl, add all purpose flour, cornflour, sugar powder, baking powder, pink salt, chilled water gradually, cooking oil & whisk well.

-Add ice cube, mix well, crispy dipping batter is ready.

-Dip donuts in a batter & add in hot cooking oil (140 °C), fry on low flame until golden & crispy.

-In a bowl, add sugar powder, milk powder, mix well.

-Coat warm donuts with sugar & milk powder mixture & serve!
