Ingredients:

-Safed til (Sesame seeds) ¼ Cup

-Mongphali (Peanuts) ½ Cup

-Methi dana (Fenugreek seeds) ½ tsp

-Zeera (Cumin seeds) 1 tbs

-Saunf (Fennel seeds) 1 tbs

-Rai dana (Mustard seeds) yellow 1 tbs

-Laung (Cloves) 4-5

-Kali mirch (Black peppercorns) ½ tsp

-Gur (Jaggery) grated ¼ Cup

-Lehsan (Garlic) cloves 6-7

-Lemon juice 3 tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Himalayan pink salt 1 & ½ tsp or to taste

-Haldi powder (Turmeric powder) ½ tsp

-Chaat masala 1 tbs

-Hari mirch (Green chillies) 15-20

-Cooking oil 2-3 tbs

-Water 2 tbs or as required

 

Directions:

-In tadka pan,add sesame seeds,peanuts,fenugreek seeds,cumin seeds,fennel seeds,mustard seeds, cloves,black peppercorns & dry roast on low flame until fragrant.

-Let it cool.

-In spice mixer,add roasted spices & grind coarsely.

-Add jaggery,garlic,grind coarsely & transfer to a bowl.

-Add lemon juice,red chilli powder,pink salt,turmeric powder,chaat masala & mix well.

-Cut green chilli from center & stuff with prepared filling.

-In frying pan,add heat cooking oil & fry stuffed chillies on medium flame for 2 minutes,turn sides & add water,cover & cook on medium flame for 4-5 minutes (makes 15-20).

-Serve with daal chawal!
