Ingredients:
-Cooking oil 2 tbs
-Pyaz (Onion) grated 1 medium
-Beef qeema (Mince) 350g
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Himalayan pink salt ½ tsp or to taste
-Sabut dhania (Coriander seeds) roasted & crushed 1 & ½ tbs
-Lal mirch (Red chilli) crushed 1 tbs
-Garam masala powder ½ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Ajwain (Carom seeds) ¼ tsp
-Lemon juice ½ tbs
-Hari mirch (Green chillies) 2-3
-Hara dhania (Fresh coriander) handful
-Maida (All-purpose flour) sifted 3 Cups
-Himalayan pink salt 1 & ½ tsp
-Sugar powdered ½ tbs
-Baking soda ½ tsp
-Khameer (Instant yeast) ½ tbs
-Dahi (Yogurt) 4 tbs
-Ghee (Clarified butter) melted 1 & ½ tbs
-Warm water ¾ Cup or as required
-Anday ki zarda (Egg yolk) 1
-Doodh (Milk) 2 tbs
-Safed til (Sesame seeds)
-Makhan (Butter) melted
-Hara dhania (Fresh coriander) chopped
Directions:
-In frying pan,add cooking oil,onion,mix well & cook on medium flame until light golden.
-Add beef mince,ginger garlic paste & mix well until it changes color.
-Add pink salt,coriander seeds,red crushed chilli,garam masala powder,cumin seeds,carom seeds,lemon juice,mix well & cook on medium flame for 2-3 minutes,cover & cook for 8-10 minutes then cook on high flame until it dries up.
-Let it cool.
-In a chopper,add green chillies,fresh coriander & chop well.
-Add cooked qeema,chop coarsely & set aside.
-In a bowl,add all-purpose flour,pink salt,sugar,baking soda,instant yeast,yogurt,clarified butter & mix well.
-Gradually add water & knead until soft dough is formed.
-Grease hand with clarified butter & knead dough again until smooth,cover & let it rest for 1 hour.
-Sprinkle dry flour & roll out with the help of rolling pin.
-Take 80g of dough,make a ball,sprinkle dry flour & roll out with the help of rolling pin.
-Add prepared qeema filling (2-3 tbs),apply water,fold all sides & seal properly.
-Spread with the help of hands (6 inches).
-In a bowl,add egg yolk,milk & whisk well.
-Apply egg on naan & sprinkle sesame seeds.
-Place naan on grill rack lined with baking paper.
-Now cook on grill+combination for 12 minutes (G 1).
-After baking,spray water & cover with kitchen cloth for 1-2 minutes (makes 6).
-Apply butter,sprinkle fresh coriander & serve with raita.
