Ingredients:
-Fresh basil leaves ½ Cup
-Lehsan (Garlic) cloves 3-4
-Kaju (Cashew nuts) 10-12
-Parmesan cheese powder 3 tbs
-Lemon juice 1 & ½ tbs
-Cooking oil 3 tbs
-Dahi (Yogurt) thick ½ Cup
-Adrak paste (Ginger paste) 1 & ½ tsp
-Mayonnaise 2-3 tbs
-Zeera powder (Cumin powder) 1 & ½ tsp
-Himalayan pink salt 1 tsp or to taste
-Safed mirch powder (White pepper powder) ½ tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Boneless chicken cubes 400g
-Kaleji (Chicken liver) 300g
-Cooking oil 2-3 tbs
-Koyla (Charcoal) for smoke
Directions:
-In a spice mixer,add fresh basil leaves,garlic,cashew nuts,parmesan cheese powder,lemon juice,cooking oil & blend well.Pesto paste is ready!
-In a bowl,add prepared pesto paste,yogurt,ginger paste,mayonnaise,cumin powder,pink salt,white pepper powder,black pepper powder & mix well.
-Add chicken,chicken liver & mix well,cover & marinate for 1 hour.
-Skew marinated chicken & liver alternately in flat wooden skewers.
-On a non-stick griddle,add cooking oil & fry skewers on low flame from both sides until done (8-10 minutes).
-Give coal smoke for 2 minutes & serve (makes 7-8 skewers).

-Bowl mein tayyar pesto paste,dahi,adrak lehsan paste,mayonnaise,zeera powder,pink salt,safed mirch powder aur kali mirch powder dal ker ache tarhan mix ker lein.
-Chicken aur kaleji dal ker ache tarhan mix karei aur dhak ker 1 hour kliya marinate ker lein.
-Marinated chicken & liver ko alternately flat wooden skewers per laga lein.
-Non-stick tawa per cooking oil dal dein aur skewers ko halki ancch per tamam sa paka lein (8-10 minutes).
-2 minute kliya koyla ka dhuwan dein & serve karein (makes 7-8 skewers).
