Zaatar Manakish

We had to bring this recipe to you all. This is something we had at a middle eastern restaurant once and really liked it. Make Zaatar manakish and enjoy. #HappyCookingToYou

Ingredients:

  • Safeed til (Sesame seeds) 2 tbs
  • Sumac powder 3 tbs
  • Dried thyme 2 & ½ tbs
  • Dried oregano 2 & ½ tbs
  • Namak (Salt) 1/4 tsp or to taste
  • Kali mirch powder (Black pepper powder) ½ tsp
  • Olive oil ½ Cup
  • Neem garam pani (Lukewarm water) 1 Cup
  • Khameer (Instant yeast) 2 tsp
  • Cheeni (Sugar) 1 & ½ tbs
  • Maida (All-purpose flour) sifted 2 Cups
  • Namak (Salt) ½ tsp or to taste
  • Olive oil 1 & ½ tbs
  • Maida (All-purpose flour) sifted 3-4 tbs or as required

Directions:

In frying pan,add sesame seeds and roast until fragrant.

In mortal & pestle,add roasted sesame seeds and crush coarsely.

In bowl,add coarsely grounded sesame seeds,sumac powder,dried thyme,dried oregano,salt,black pepper powder and mix well.

Add olive oil,mix well & set aside.

In small jug,add lukewarm water,instant yeast,sugar and mix well,cover and let it rest for 10-15 minutes.

In bowl,add all-purpose flour,salt,olive oil and mix well.

Add yeast mixture,mix well and knead until dough is formed.

Grease dough with olive oil,cover and let it rest for 1 hour (warm place).

Sprinkle flour,knead dough again and divide into 4 equal parts.

Take one part,make a ball and roll out with the help of rolling pin.

Place rolled dough on greased baking tray and prick with fork.

Add & spread prepared sesame seeds mixture (makes 4).

Bake in preheated oven at 180 C for 6-8 minutes.

Cut into slices & serve!
