Ingredients:
Prepare Pakora Mix:
-Baisan (Gram flour) 2 Cups
-Chawal ka atta (Rice flour) 2 tbs
-Zarday ka rang (Orange food color) ¼ tsp
-Ajwain (Carom seeds) ¼ tsp
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Iodized Himalayan pink salt 1 & ½ tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 2 tsp
-Haldi powder (Turmeric powder) 1 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Baking soda ½ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Pyaz (Onions) sliced 2 medium
-Hari mirch (Green chillies) chopped 2
-Hara dhania (Fresh coriander) handful
-Water ½ Cup or as required
-Water ¼ cup or as required
-Tamatar (Tomato) sliced 1 large or as required
-Hari mirch (Green chillies) sliced 7-8 or as required
Direction:
Prepare Pakora Mix:
-In a jar, add gram flour, rice flour, orange food color, carom seeds, coriander, red chilli powder, pink salt, cumin, turmeric powder, red chilli crushed, baking soda, cover & shake well. Set aside.
-In a bowl, add 1 & ½ Cup of pakora mixture, add ginger garlic paste, onions, green chillies, fresh coriander, water (add gradually) & mix well. Onion pakora batter is ready! Let it rest for 5-10 minutes
-In another bowl add ¾ cup of pakora mixture & water then mix well. Aloo pakora mixture is ready! Set aside.
-In a wok, add cooking oil, heat it. (160 C)
-Add onion pakora mixture in half of oil & dip potato slices in pakora batter, add in oil, fry on medium flame for 3-4 minutes & remove them when they are half done.
-Fry them again on high flame until golden brown & crispy.
-In the same cooking oil (180 C), add tomato slices & green chilli slices, fry on high flame for 1 minute.
-In a serving platter, add fried pakoray, fried tomato & green chilli slices, pickle, garnish with cabbage & serve!

Prepare Pakora Mix:

-Ek jar mein gram flour, rice flour, orange food color, carom seeds, coriander, red chilli powder, pink salt, cumin, turmeric powder, red chilli crushed aur baking soda dalein, cover karen aur achi tarah shake karlen. Side par rakh den.
-Ek bowl mein 1 & ½ cup pakora mixture dalein, ginger garlic paste, pyaz, hari mirch, hara dhania aur pani (thora thora dalte hue) dalein aur achi tarah mix karlen. Onion pakora batter ready hai! Isay 5-10 minute ke liye rest karne den.
-Ek aur bowl mein ¾ cup pakora mixture aur pani dalein phir achi tarah mix karlen. Aloo pakora mixture ready hai! Side par rakh den.
-Ek wok mein cooking oil dalein aur garam karlen. (160 C)
-Oil ke aadhe hissay mein onion pakora mixture dalein aur aloo ke slices ko pakora batter mein dip karen, phir oil mein dalein. Medium flame par 3-4 minute fry karen aur jab half done ho jayein to nikal len.
-Phir unhein dobara high flame par fry karen jab tak golden brown aur crispy na ho jayein.
-Isi cooking oil mein (180 C) tamatar ke slices aur hari mirch ke slices dalein aur high flame par 1 minute fry karlen.
-Serving platter mein fried pakoray, fried tamatar aur hari mirch ke slices, achar dalein, band gobhi se garnish karen aur serve karen!
