Ingredients:

  • Cooking oil ½ Cup
  • Pyaz (Onion) sliced 2 large
  • Badam (Almonds) 10-11
  • Sabut kali mirch (Black peppercorns) ½ tsp
  • Darchini (Cinnamon sticks) 2
  • Badiyan ka phool (Star anise) 1
  • Laung (Cloves) 5-6
  • Badi elaichi (Black cardamom) 1
  • Hari elaichi (Green cardamom) 5-6
  • Tez paat (Bay leaves) 2
  • Mutton mix boti ½ kg
  • Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
  • Lal mirch powder (Red chili powder) 1 tbs or to taste
  • Dhania powder (Coriander powder) 1 & ½ tbs
  • Haldee powder (Turmeric powder) ½ tsp
  • Namak (Salt) 2 tsp or to taste
  • Dahi (Yogurt) whisked ¾ Cup (room temperature)
  • Pani (Water) 1 Cup or as required
  • Garam masala powder 1 tsp
  • Elaichi powder (Cardamom powder) ¼ tsp
  • Jaifil powder (Nutmeg powder) ½ tsp
  • Javatri powder (Mace powder) ½ tsp
  • Adrak (Ginger) julienne 1 inch piece
  • Dahi (Yogurt) whisked ¼ Cup (room temperature)
  • Kewra water 2 tbs
  • Zarda ka rang (Yellow food color) ¼ tsp or as required
  • Chawal (Rice) ½ kg (boiled with salt until 3/4th done)
  • Podina (Mint leaves) handful

Directions:

In wok,add cooking oil,onion and fry until golden brown & take out in a bowl.

In spice mixer,add almonds and blend well.

Add half quantity of fried onions and blend again,set aside and save remaining quantity of fried onion for later use.

In the same wok,add black peppercorns,cinnamon sticks,star anise,cloves,black cardamom,green cardamom,bay leaves & mix.

Add mutton mix boti and mix well until changes color.

Add ginger garlic paste,mix well and cook for 10 minutes.

Add red chili powder,coriander powder,turmeric powder,salt and mix well for 2 minutes.

Add yogurt and mix well.

Add water,mix well and bring it to boil.

Cover and cook on low flame until meat is tender (approx. 30-40 minutes).

Now add blend almond & onion mixture and mix well.

Add garam masala powder,cardamom powder,nutmeg powder,mace powder,mix well and cook until oil separates.

Add ginger,mix & set aside.

In yogurt,add kewra water,yellow food color,mix well & set aside.

In pot,add a layer of boiled rice,cooked qorma,fried onion,mint leaves,half quantity of prepared yogurt mixture,boiled rice,cooked qorma,fried onion,mint leaves,remaining prepared yogurt mixture and boiled rice,cover and steam cook on low flame for 8-10 minutes
