Ingredients:

-Pyaz (Onion) fried 1 Cup

-Kaju (Cashew nuts) 10-12

-Lehsan (Garlic) 8-10 cloves

-Adrak (Ginger) 2-inch pieces

-Hari mirch (Green chillies) 2

-Water 3-4 tbs

-Beef qeema (Mince) 1 kg with 15% fat

-Chanay ka atta (Chickpea flour) roasted ½ Cup

-Kacha papita (Raw papaya) paste 3-4 tbs

-Himalayan pink salt 2 & ½ tsp or to taste

-Lal mirch powder (Red chilli powder) 2 tsp or to taste

-Garam masala powder 2 tsp

-Elaichi powder (Cardamom powder) 1 tsp

-Javitri powder (Mace powder) ½ tsp

-Ghee (Clarified butter) 2 tbs

-Kewra water 2 tsp

-Water 3-4 tbs

-Koyla (Charcoal) for smoke

-Laung (Cloves) 5-6

-Cooking oil 2-3 tbs

 

Directions:

-In a grinder,add fried onion,cashew nuts,garlic,ginger,green chillies & grind well.

-Add water,grind well & set aside.

-In a large tray,add beef mince,chickpea flour,ground paste,raw papaya paste,pink salt,red chilli powder, garam masala powder,cardamom powder,mace powder,mix & knead well with the help of hands.

-Add clarified butter & mix well.

-Add kewra water,water,mix & knead well with the help of hands for 12-15 minutes.

-Place cloves on charcoal & give coal smoke for 2-3 minutes.

-On a non-stick griddle,add cooking oil.

-With the help of greased hands,take small quantity of mixture (45-50g) & fry on low flame from both sides until golden brown (makes 30-32).

-Serve with paratha & chutney!
