Ingredients:
-Lehsan (Garlic) 10-12 cloves
-Pyaz (Onion) sliced 1 small
-Sabut dhania (Coriander seeds) 1 tbs
-Zeera (Cumin seeds) ½ tbs
-Ajwain (Carom seeds) ¼ tsp
-Himalayan pink salt ½ tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Baisan (Gram flour) roasted 1 tbs
-Haldi powder (Turmeric powder) ½ tsp
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Water 2 tbs or as required
-Baingan (Eggplants) 3
-Cooking oil 2-3 tbs
-Lemon juice 1 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
-In mortar & pestle,add garlic,onion,coriander seeds,cumin seeds,carom seeds & crush coarsely.
-Add pink salt,kashmiri red chilli powder,gram flour,turmeric powder,red chilli powder,add water gradually,mix well to make a thick paste & set aside.
-Cut eggplant in slices vertically,make diagonal cuts on it to create diamond shape grid,apply prepared spice mix on both sides & rub gently.
-In frying pan,heat cooking oil & fry eggplant on low flame for a minute,cover & fry on low flame for 5-6 minutes each side & turn sides in between.
-Squeeze lemon juice,sprinkle fresh coriander & serve with ghee wali roti & raita!

-Mortar & pestle mein lehsan,pyaz,sabut dhania,zeera aur ajwain dal ker coarsely crush kar lein.
-Ab is mein pink salt,kashmiri lal mirch powder,baisan,haldi powder aur lal mirch powder dal dein,thora thora ker ka pani shamil karein aur ache tarhan mix ker ka thick paste tayyar kar lein & side per rakh dein.
-Baingan ko lambi slices mein cut karein aur her slice par diagonal cuts lagayein taake diamond shape ka pattern ban jaaye aur tayyar spice mix ko dono sides per laga ker gently rub karein.
-Frying pan mein cooking oil garam karein aur baingan slices rakh ker halki ancch per ek minute kliya fry karein aur dhak ker halki ancch per dono sides sa 5-6 minutes kliya fry ker lein aur bech mein side ko change ker lein.
-Phir dhakkan de kar dono taraf se 5-6 minutes tak low flame par fry karein, beech beech mein side change karte rahein.
-Lemon juice aur hara dhania dal dein,ghee wali roti aur raita ke saath serve karein.
