Lachaydar Anda Keema Paratha

Ingredients:

Prepare Qeema Filling:

-Beef qeema (Mince) hand chopped 350g

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Hari mirch (Green chilli) chopped ½ tbs

-Tamatar (Tomatoes) chopped 2 medium

-Pyaz (Onion) chopped 1 medium

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Himalayan pink salt 1 tsp or to taste

-Haldi powder (Turmeric powder) ¼ tsp

-Zeera (Cumin seeds) roasted & crushed ½ tbs

-Garam masala powder ½ tsp

-Hara dhania (Fresh coriander) chopped 1-2 tbs

-Water 1 Cup

-Cooking oil 3-4 tbs

Paratha Dough:

-Maida (All-purpose flour) sifted 2 Cups

-Himalayan pink salt ½ tsp

-Ghee (Clarified butter) 1 tbs

-Water ¾ Cup or as required

-Cooking oil 1 tbs

-Cooking oil 1-2 tbs

-Anday (Eggs) 2

-Hari mirch (Green chilli) sliced

-Hara dhania (Fresh coriander) chopped

-Tomato ketchup

Directions:

Prepare Qeema Filling:

-In a frying pan,add beef mince,ginger garlic paste,green chilli,tomatoes,onion,red chilli powder,pink salt,turmeric powder,cumin seeds,garam masala powder,fresh coriander,water & mix well.

-Turn on the flame,bring it to boil,cover & cook on low flame for 14-15 minutes.

-Add cooking oil,mix well & cook on high flame until it dries up (8-10 minutes).

-Let it cool.

Prepare Dough:

-In a bowl,add all-purpose flour,salt,clarified butter & mix well until it crumbles.

-Gradually add water & knead until dough is formed.

-Grease with clarified butter,cover & let it rest for 30 minutes.

-Take a small dough (150g) & make a ball,sprinkle dry flour & roll out with the help of rolling pin.

-Sprinkle dry flour & cut into thin strips with cutter.

-Gather all layers together & stretch slightly then round into circle shape.

-On griddle,place paratha & fry from both sides until done with cooking oil.

-In the centre of the paratha,add cooking oil,eggs,cover & cook until done.

-Add qeema filling,green chilli,fresh coriander,tomato ketchup,cover & cook on low flame for a minute & serve (makes 3).
