Ingredients:

Prepare Chicken Filling:

-Cooking oil 2-3 tbs

-Pyaz (Onion) sliced 1 medium

-Boneless chicken cubes 500g

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Paprika powder 1 & ½ tsp

-Haldi powder (Turmeric powder) ¼ tsp

-Dried oregano 2 tsp

-Himalayan pink salt 1 tsp or to taste

-Soy sauce 1 tbs

-Olper’s Cheddar cheese 60g (½ Cup)

-Mayonnaise 1/3 Cup

-Chilli garlic sauce 2 tbs

-Sriracha sauce 1 tbs

Prepare Pita Dough:

-Warm water ½ Cup

-Bareek cheeni (Caster sugar) 1 tbs

-Khameer (Instant yeast) 2 tsp

-Olper’s Milk warm ¼ Cup

-Cooking oil 2 tbs

-Maida (All-purpose flour) sifted 2 & ½ Cups

-Himalayan pink salt ½ tsp

-Cooking oil 1 tsp

-Cooking oil 1 tsp

-Makhan (Butter) soft as required

-Olper’s Milk

-Pyaz (Onion) sliced

-Olper’s Mozzarella cheese as required

-Lal mirch (Red chilli) crushed

-Salad patta (Lettuce leaf)

 

Directions:

Prepare Chicken Filling:

-In a frying pan,add cooking oil & heat it.

-Add onion & fry until light golden.

-Add chicken,ginger garlic paste & mix well until it changes color.

-Add paprika powder,turmeric powder,dried oregano,pink salt,soy sauce,mix well & cook on medium flame for 4-5 minutes then cook on high flame until it dries up.

-Remove from flame,add cheddar cheese & mix well until cheese melts.

-Let it cool.

-Add mayonnaise,chilli garlic sauce,sriracha sauce,mix well & set aside.

Prepare Pita Dough:

-In a bowl,add warm water,caster sugar,instant yeast,mix well & let it proof for 5 minutes.

-Add warm milk,cooking oil,all-purpose flour,pink salt,mix well & knead until dough is formed.

-Add cooking oil & knead for 1-2 minutes,grease with cooking oil,cover with cling film & let it proof for 45 minutes to 1 hour at warm place or until double in size.

-Knead dough until smooth.

-Take a small dough (80g),sprinkle dry flour & roll out with the help of rolling pin (6 inches).

-Place rolled dough on a baking tray lined with silicon baking sheet.

-Mark the dough in half with the help of dough cutter,apply soft butter on half side of rolled dough & flip the other side on it.

-Apply milk,add onion,mozzarella cheese & sprinkle red chilli crushed.

-Bake in preheated oven at 180C for 12-14 minutes (on lower grill).

-Take out from oven & cover with kitchen cloth for 15 minutes.

-On each pita bread,add lettuce leaf,prepared chicken filling & serve (makes 6)!
