Ingredients:
Prepare Mini Samosa:
-Aloo (Potatoes) 2 medium
-Himalayan pink salt ½ tsp or to taste
-Samosa sheet as required
-Cooking oil for frying
Prepare Street Style Aloo ki Chutney:
-Water 3 Cups
-Aloo (Potatoes) boiled 2 medium
-Imli pulp (Tamarind pulp) ¼ Cup
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Chicken powder 1 tsp
-Tatri (Citric acid) ¼ tsp
-Haldi powder (Turmeric powder) ½ tsp
-Chaat masala 1 tsp
-Himalayan pink salt ½ tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Lal mirch (Red chilli) crushed 1 & ½ tsp
-Zarda ka rang (Orange food color) 1 pinch or as required
-Cornflour 1 tsp
-Water 1 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
Prepare Mini Samosa:
-In potatoes,add pink salt,mash well & set aside.
-Cut samosa sheet,make a pocket,add prepared potato filling (1 tsp) & roll into the shape of samosa and seal corners with all-purpose flour slurry & reserve remaining potato mixture for chutney.
-Similarly make other samosas (makes 30 mini samosa).
-In wok,heat cooking oil & fry on medium flame until golden & crispy.
Prepare Street Style Aloo ki Chutney:
-In a saucepan,add water,potatoes,tamarind pulp,red chilli powder,chicken powder,citric acid,turmeric powder,chaat masala,pink salt,cumin seeds & blend well.
-Add reserved potato mixture,red chilli crushed & orange food color.
-Turn on the flame,mix well & cook on medium flame for 6-8 minutes.
-In cornflour,add water & mix well.
-Add dissolved cornflour,mix well & cook until it thickens.
-Let it cool.
-You can make & store this sauce for up to 1 week in refrigerator.
-On mini samosa,add prepared chutney,fresh coriander & serve!

-Samosa sheet ko cut ker lein,pocket bana lein aur tayyar aloo filling (1 tsp) bhar dein aur samosa ki shape bana ker corners ko maida ki slurry sa seal ker lein & baqi aloo mixture ko chutney kliya rakh dein.
-Is he tarhan baqi samosa bhi tayyar ker lein (makes 30 mini samosa).
-Karahi mein cooking oil garam karein aur darmiyani ancch per golden & crispy ho janay tak fry ker lein.
Prepare Street Style Aloo ki Chutney:
-Saucepan mein pani,aloo,imli pulp,lal mirch powder,chicken powder,tatri,haldi powder,chaat masala, pink salt aur zeera dal ker ache tarhan blend ker lein.
-Reserved aloo mixture,lal mirch crushed aur zarda ka rang dal dein
-Chulha on karein,ache tarhan mix karein aur darmiyani ancch per 6-8 minutes kliya paka lein.
-Cornflour mein pani dal ker ache tarhan mix ker lein.
-Dissolved cornflour dal ker ache tarhan mix karein aur garha ho janay tak paka lein.
-Thanda ker lein.
-1 week kliya refrigerator mein store ker saktay han.
-Mini samosa mein tayyar chutney aur hara dhania dal ker serve karein!
