  • Aloo (Potato) boiled ¾ Cup
  • Bajray ka atta (Millet flour) sifted 1 & ½ Cups
  • Atta (Wheat flour) sifted 4 tbs
  • Namak (Salt) 1 tsp or to taste
  • Zeera (Cumin seeds) ½ tsp
  • Lal mirch (Red chili) powder 1 tsp or to taste
  • Baking soda 1 pinch
  • Methi (Fresh fenugreek leaves) chopped ½ Cup
  • Dahi (Yogurt) strained 3 tbs
  • Pani (Water) ½ Cup or as required
  • Aata (Wheat flour) as needed
  • Cooking oil for frying


In a bowl,mash boiled potatoes with the help of the masher.

Add millet flour,wheat flour,salt,cumin seeds,red chili powder,baking soda,fresh fenugreek leaves, yogurt and mix well until crumbled.

Gradually add water and knead until soft dough is formed (approx. 5-6 minutes).

Take a small dough,make a ball and sprinkle dry wheat flour and roll out with the help of rolling pin (makes 9-10).Don’t rest the dough.

In wok,heat cooking oil and fry puri on medium low flame until golden brown.
