Ingredients:

Masala (Base Gravy):

  • Oil 3-4 tbs
  • Zeera (Cumin seeds) ½ tsp
  • Hari mirch (Green chilies) chopped 2
  • Pyaz (Onion) chopped 1 small
  • Lehsan (Garlic) crushed 1 tsp
  • Tamatar (Tomato) cubes 1 large
  • Namak (Salt) ½ tsp or to taste
  • Haldee powder (Turmeric powder) ¼ tsp
  • Dhania powder (Coriander powder) ½ tbs
  • Lal mirch powder (Red chili powder) ½ tsp or to taste

Aalo Gobhi (Cauliflower & Potato):

  • Phool gobhi (Cauliflower) florets 2 Cups
  • Aloo (Potato) peeled & cubes 1 Cup
  • Boiling hot water 1 & ½ Cups or as required
  • Garam masala powder ½ tsp
  • Hara dhania (Fresh coriander) chopped 1-2 tbs

Palak Sahljam (Spinach & Turnip):

  • Palak (Spinach) chopped 1 & ½ Cups
  • Shaljam (Turnip) boiled & cubes 2 medium
  • Kali mirch (Black pepper) crushed ½ tsp
  • Garam masala powder ½ tsp
  • Hara dhania (Fresh coriander) chopped 1-2 tbs

Aalo Choley (Potato & Chickpea):

  • Aloo (Potato) peeled & cubes 2 large
  • Boiling hot water 1 Cup or as required
  • Choley (Chickpeas) boiled 1 Cup
  • Garam masala powder ½ tsp
  • Hara dhania (Fresh coriander) chopped 1-2 tbs

Directions:

Masala (Base Gravy):

In wok,add oil,cumin seeds,green chilies and mix well.

Add onion and fry until brown.

Add garlic and mix well.

Add tomato and mix well.

Add salt,turmeric powder,coriander powder,red chili powder and mix well.

Cover and let it simmer for 2-3 minutes.

Aalo Gobhi (Cauliflower & Potato):

Add cauliflower,potato and mix well.

Add boiling hot water,mix well and bring it to boil.

Cover and cook on medium low flame for 8-10 minutes then cook on high flame until oil separates.

Sprinkle garam masala powder,fresh coriander & serve.

Palak Sahljam (Spinach & Turnip):

In wok,add oil,cumin seeds,green chilies and mix well.

Add onion and fry until brown.

Add garlic and mix well.

Add tomato and mix well.

Add salt,turmeric powder,coriander powder,red chili powder and mix well.

Cover and let it simmer for 2-3 minutes.

Add spinach and mix well.

Cover and cook on low flame for 3-4 minutes.

Add turnips,mix well and cook for 4-5 minutes.

Add black pepper crushed and mix well.

Sprinkle garam masala powder,fresh coriander & serve.

Add onion and fry until brown.

Add garlic and mix well.

Add tomato and mix well.

Add salt,turmeric powder,coriander powder,red chili powder and mix well.

Cover and let it simmer for 2-3 minutes.

Add potato and mix well.

Add boiling hot water,mix well and bring it to boil.

Cover and cook on medium low flame until potatoes are tender.

Add chickpeas,mix well and cook until oil separates.

Sprinkle garam masala powder,fresh coriander & serve.
