Ingredients:
Prepare Garlic Yogurt:
-Dahi (Yogurt) hung 1 Cup
-Cream 2-3 tbs
-Lehsan (Garlic) finely chopped 1 tsp
-Iodized Himalayan pink salt ¼ tsp or to taste
-Lemon juice 1 tsp
Prepare Chilli Butter:
-Makhan (Butter) ¼ Cup (Approx. 60g)
-Paprika powder ½ tsp
-Lal mirch (Red chilli) crushed ½ tbs
-Podina (Mint) dried & crushed 1 tsp
Prepare Soft-Boiled Eggs:
-Water as required
-Anday (Eggs) Large & chilled (2 for each serving)
-Iced water as required
Prepare Crispy Flatbread :
-Warm water ¾ Cup or as required
-Bareek cheeni (Caster sugar) 2 tsp
-Khameer (Instant yeast) 2 tsp
-Maida (All-purpose flour) sifted 2 Cups
-Iodized Himalayan pink salt 1 tsp or to taste
-Cooking oil 1 tbs
-Warm water ¼ Cup
-Cooking oil 1 tsp
-Cooking oil 2-3 tbs
Assembling:
-Sumac Onion Salad (Onions marinated in sumac, Lemon juice & Olive oil)
-Hara dhania (Fresh coriander)
Directions:
Prepare Garlic Yogurt:
-In a bowl,add yogurt,cream,garlic,pink salt,lemon juice & whisk well until smooth.Garlic yogurt is ready!
Prepare Chilli Butter:
-In a tadka pan,add butter & let it melt.
-Turn off the flame,add paprika powder,red chilli crushed,dried mint leaves,mix well.Spicy butter is ready!
Prepare Soft-Boiled Eggs:
-In saucepan,add water & bring it to boil,add eggs & boil for 6 minutes then add in iced water for 3-4 minutes to stop its cooking then peel it.
Prepare Cripsy Flatbread Dough:
-In a bowl,add warm water,caster sugar,instant yeast & whisk well,cover & let it bloom for 10-15 minutes.
-Gradually add all-purpose flour & mix well until gluten forms.
-Add remaining all-purpose flour,pink salt,cooking oil & mix well.
-Gradually add warm water,mix well & knead until dough is formed.
-Grease dough with cooking oil,cover & let it rest for 45 minutes to 1 hour (warm place).
-Knead again until smooth dough.
-Take a dough ball,grease working surface with cooking oil & flatten the dough,cover with kitchen cloth & let it proof for 8-10 minutes.
-In frying pan,heat cooking oil & fry on high flame from both sides until golden (makes 5-6 flatbreads).
Assembling:
-In a serving plate,add turkish flat bread,brush spicy butter,prepared garlic yogurt,half boiled eggs,pour spicy butter,sumac onion salad,fresh coriander & serve!

-Bowl mein yogurt, cream, garlic, pink salt, lemon juice daal kar whisk kar lein. Garlic yogurt tayyar hai!
Prepare Chilli Butter:
-Tadka pan mein butter daal kar melt kar lein.
-Flame band kar ke paprika powder, red chilli crushed, dried mint leaves daal kar mix kar lein. Spicy butter tayyar hai!

-Saucepan mein paani daal kar boil kar lein, anday daal kar 5-6 minutes tak boil kar lein.
-Iced water mein 3-4 minutes ke liye daal kar cooking rok lein, phir peel kar lein.

-Bowl mein warm water, caster sugar, instant yeast daal kar whisk kar lein, cover kar ke 10-15 minutes tak bloom karne dein.
-Ab gradually all-purpose flour daal kar mix karte jayein jab tak gluten form ho jaye.
-Baqi all-purpose flour, pink salt, cooking oil daal kar mix kar lein.
-Ab warm water gradually daal kar smooth dough knead kar lein.
-Dough ko cooking oil se grease kar ke cover kar dein aur 45 minutes se 1 ghanta tak warm jagah par rest karne dein.
-Phir dough ko dobara knead kar ke smooth kar lein.
-Aik dough ball lein, working surface ko grease kar ke dough flatten kar lein, kitchen cloth se cover kar ke 5-10 minutes proof karne dein.
-Frying pan mein cooking oil heat kar ke dono sides se high flame par golden fry kar lein (5-6 breads tayyar ho jayein).
Assembling:
-Serving plate mein Turkish flat bread rakhein, brush karein spicy butter se.
-Uske upar lagayein prepared garlic yogurt, half boiled eggs, phir chilli butter pour karein.
-Upar se spiced onion aur fresh coriander daal kar serve karein!
