Ingredients:
Cauliflower:
- Pani (Water) 3-4 cups
- Phool gobhi (Cauliflower) Florets 1 & ½ cup
- Maida (All-purpose flour) ¾ cup
- Kali mirch powder (Black pepper powder) ½ tsp
- Namak (Salt) ½ tsp or to taste
- Anda (Egg) 1
- Thanda pani (Chilled water) as required
- Oil for frying
Vegetables:
- Oil 1 tbs
- Mushrooms sliced ¼ cup
- Gajar (Carrot) sliced ½ cup
- Shimla mirch (Capsicum) ¼ Cup or as required
- Hari pyaz ka safed hissa (Green onion white part) ½ cup
- Matar (Peas) boiled ¼ cup
Gravy:
- Oil 1-2 tbs
- Lehsan (Garlic) chopped ½ tsp
- Tomato ketchup ½ cup
- Soya sauce 3 Tbs
- Worcestershire sauce 1 tbs
- Sirka (Vinegar) 2 tbs
- Brown sugar 2 tbs
- Lal mirch (Red chili) Crushed 1 tsp
- Safed mirch powder (White pepper powder) 1 tsp
- Kali mirch (Black pepper) Crushed 1 tsp
- Namak (Salt) ¼ tsp or to taste
- Yakhni (stock) chicken 1 cup
- Chicken stock 1 cup
- Pani (Water) ½ cup
- Corn flour 1 tbs
- Til ka tel (Sesame oil) 1 tsp
- Til (Sesame seeds)
- Hara pyaz (green onion)
Directions:
Cauliflower:
In pot,add water,bring it to boil and add cauliflower,simmer for 2-3 minutes, strain and place it in chilled water. -In bowl, add all-purpose flour, black pepper powder,salt,egg,chilled water and mix well. -Add blanched cauliflower in batter, coat and deep fry until golden and set aside.
Vegetables:
In wok,add oil, mushrooms (sliced) and stir fry. -Now add carrot (sliced), mix it and add capsicum, green onion (white part), peas (boiled), sauté for 1-2 minutes and set aside.
Gravy:
In wok,add oil and garlic (chopped) and sauté little. -Add tomato ketchup,soya sauce,worcestershire sauce,vinegar,brown sugar,red chili crushed,white pepper powder,black pepper crushed,salt and mix well. -Add chicken stock, mix it and bring it to boil. -Dissolve corn flour in water and mix well. -Add corn flour paste in gravy and give it a good mix. -Now add fried vegetables and cauliflower, mix it. -Add sesame oil and mix well. -Garnish with sesame seeds and green onion.

Pot mein pani dal ker ubal lein,phool gobhi shamil ker ka 2-3 minute kliya simmer karein,strain ker ka thanda pani mein dal dein.
Bowl mein maida,kali mirch powder,namak,anda aur thanda pani dal ker ache tarhan mix ker lein.
Batter mein blanched phool gobhi dal ker coat karein aur sunhairi hunay tak deep fry ker lein,side per rakh dein.
Vegetables:
Karhai mein oil aur mushrooms (sliced) dal ker stir fry karein.
Ab is mein gajar (sliced) dal ker mix karein,shimla mirch,hari pyaz (white part),matar (boiled) dal ker 1-2 minute kliya saute ker lein,side per rakh dein.
Gravy:
Karhai mein oil aur lehsan (chopped) dal ker halka sa saute ker lein.
Tomato ketchup,soya sauce,worcestershire sauce,sirka,brown sugar,lal mirch(crushed),safed mirch,kali mirch(crushed) aur namak dal ker ache tarhan mix ker lein.
Yakhni shamil karein aur ubal anay tak paka lein.
Corn flour ko pani mein dal ker mix karein.
Gravy mein corn flour paste dal ker ache tarhan mix ker lein.
Ab is mein fried vegetables aur phool gobhi shamil karein aur mix ker lein.
Til ka tal dal ker mix ker lein.
Til aur hara pyaz sa garnish karein.
