Dynamite Starters (Chicken, Prawn & Cauliflower)

Ingredients:

-Boneless chicken cubes 300g

-Prawns deveined 300g

-Phool gobhi (Cauliflower) small florets 300g (blanched for 10 minutes)

-Soy sauce 1 & ½ tbs

-Lemon juice 1 tsp

-Lehsan paste (Garlic paste) 1 tsp

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Himalayan pink salt ½ tsp or to taste

-Kali mirch powder (Black pepper powder) ½ tsp

-Maida (All-purpose flour) 1 Cup or as required

-Maida (All-purpose flour) ½ Cup

-Cornflour ¼ Cup

-Kali mirch powder (Black pepper powder) ½ tsp

-Himalayan pink salt ½ tsp or to taste

-Anda (Egg) 1

-Chilled water ½ Cup or as required

-Cooking oil for frying

Prepare Dynamite Sauce:

-Mayonnaise ½ Cup

-Sriracha sauce 2 tbs

-Honey 2 tbs

-Tomato ketchup 2 tbs

-Lehsan powder (Garlic powder) ¼ tsp

-Himalayan pink salt 1 pinch or to taste

-Iceberg leaves

-Hara pyaz (Spring onion) leaves chopped

-Til (Sesame seeds)

 

Directions:

-In a bowl,add chicken/prawns/cauliflower,soy sauce,lemon juice,garlic paste,red chilli powder,pink salt, black pepper powder & mix well,cover & marinate for 15-20 minutes.

-In a bowl add all-purpose flour.

-In another bowl,add all-purpose flour,cornflour,black pepper powder,pink salt,egg,gradually add chilled water & whisk until well combined.

-Now coat marinated chicken/prawns/cauliflower one by one in all-purpose flour & dip in prepared batter.

-In a wok,heat cooking oil (150C) & fry coated chicken/prawns/cauliflower on medium low flame until golden brown & crispy.

Prepare Dynamite Sauce:

-In a bowl,add mayonnaise,sriracha sauce,honey,tomato ketchup,garlic powder,pink salt & mix until well combined.Dynamite sauce is ready!

-Add fried chicken,fried prawns,fried cauliflowers & coat well.

-Serve on iceberg leaves,garnish with sesame seeds & spring onion leaves!
