Degi Yakhni pulao

Ingredients:

  • Beef mix boti 750g
  • Water 4-5 Cups
  • Boiling water as required
  • Namak (Salt) 1 & ½ tsp or to taste
  • Chawal (Rice) Basmati ½ kg (soaked 30 minutes)
  • Ghee (Clarified butter) ½ Cup
  • Zeera (Cumin seeds) 1 & ½ tsp
  • Badi elaichi (Black cardamom) 2
  • Hari elaichi (Green cardamom) 2-3
  • Sabut kali mirch (Black peppercorns) ½ tsp
  • Laung (Cloves) 3-4
  • Badiyan ka phool (Star anise) 2
  • Darchini (Cinnamon sticks) 2
  • Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
  • Hari mirch (Green chilli) crushed ½ tbs
  • Pyaz (Onion) fried ½ Cup
  • Tamatar (Tomatoes) sliced 2 medium
  • Dahi (Yogurt) thick & whisked 1 Cup
  • Namak (Salt) 1 tsp or to taste
  • Haldi powder (Turmeric powder) ¼ tsp
  • Lal mirch (Red chilli) crushed ½ tbs
  • Saunf (Fennel seeds) crushed ½ tbs
  • Sabut dhania (Coriander seeds) crushed ½ tbs
  • Garam masala powder 1 tsp
  • Javitri powder (Mace powder) ¼ tsp
  • Jaifil powder (Nutmeg powder) ¼ tsp
  • Hari mirch (Green chillies) 4-5
  • Aloo bukhara (Dried plums) 5-6
  • Hara dhania (Fresh coriander) chopped handful
  • Pyaz (Onion) Fried
  • Hari mirch (Green chillies) slit 3-4
  • Hara dhania (Fresh coriander) chopped

Directions:

In a pot,add beef mix boti,water,mix well & bring it to boil.

Remove scum,cover & cook on medium flame until meat is tender (30-35 minutes),cook until reduced to 1 & ½ cup of stock & set aside.

In boiling water,salt & mix well.

Add soaked rice,mix well & boil until 3/4th done then strain & set aside.

In a pot,add clarified butter & let it melt.

Add cumin seeds,black cardamom,green cardamom,black peppercorns,cloves,star anise,cinnamon sticks & mix well.

Add ginger garlic paste,green chilli crushed,mix well & cook on medium flame for a minute.

Add fried onion,tomatoes,mix well & cook until tomatoes are soft.

On low flame,add yogurt & mix well.

Add salt,turmeric powder,red chilli crushed,fennel seeds,coriander seeds,garam masala powder,mace powder,nutmeg powder,mix well & cook until oil separates (2-3 minutes).

Now add cooked beef with stock,mix well and bring it to boil,cover & cook on medium flame for 8-10 minutes (cook until reduced to ½ Cup).

Add green chillies,dried plums,fresh coriander,boiled rice,fried onion,green chillies and fresh coriander, cover & cook on medium flame for 2-3 minutes then steam cook on low flame for 8-10 minutes then mix well.

Garnish with fried onion & serve!
