Ingredients:
Prepare Creamy Hot Sauce:
-Cream 1 Cup
-Chilli oil 1 & ½ tbs
-Cornflour 1 tsp
-Bareek Cheeni (caster sugar) ½ tsp
-Iodized Himalayan pink salt 1 pinch
-Water 1-2 tbs
-Boneless chicken cubes 500g
-Hara pyaz (Spring onion) leaves chopped ¼ cup
-Pyaz (Onion) chopped 1 small
-Adrak lehsan (Ginger garlic) crushed 1 tbs
-Anday ki zardi (Egg yolk) 1
-Paprika powder 1 tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Lal mirch powder (Red chilli Powder) ½ tsp or taste
-Cornflour 1 tbs
-Soy sauce 1 & ½ tbs
-Oyster sauce 1 & ½ tbs
-Chilli oil 1 tbs
-Anday ki safedi (Egg white) 1
-Water 2-3 tbs
-Cornflour 1 tsp
-Manda patti/samosa sheets 8-10 or as required
-Dalda canola oil as required
Direction:
Prepare Creamy Hot Sauce:
-In a saucepan, add cream, chilli oil, cornflour, caster sugar, pink salt, & water.
-Mix well & cook on low flame for 3-4 minutes or until it thickens. Set aside.
-In a chopper, add chicken, spring onion, onion, crushed ginger garlic, egg yolk, paprika powder, pink salt, black pepper, red chilli powder, cornflour, soy sauce, oyster sauce, chilli oil, & chop well. Set aside.
-In a bowl, add egg white, water, cornflour, & whisk well. Slurry is ready; set aside.
-On a cutting board, place samosa sheets, fold & cut into thin (thread-like) strips.
-Scoop out chicken mixture, then transfer to greased hands & make a smooth ball.
-Now dip it in slurry and coat with samosa sheet strips (Makes 20-21).
-In a wok, add oil & heat it (160 C).
-Add prepared balls and fry on low to medium flame until golden & crispy.
-In a serving platter, add prepared sauce and spread it, now put crispy fried chicken dim sum & garnish with spring onion leaves and carrot.
