Ingredients:
Prepare Chicken for Shawarma:
-Boneless chicken preferably thighs pieces 600g
-Pyaz (Onion) grated 1 large (Onion water should be ¼ Cup)
-Tomato paste 2 tbs
-Lemon juice 1 tbs
-Dahi (Yogurt) thick 1/3 Cup
-Lal mirch (Red chilli) crushed 1 tsp
-Paprika powder 1 tsp
-Dried oregano 1 tbs
-Namak (Salt) ½ tbs or to taste
-Zeera powder (Cumin powder) 1 tbs
-Lehsan paste (Garlic paste) ½ tbs
-Olive oil 2 tbs
-Cooking oil 2-3 tbs
Prepare Sauce:
-Tomato paste 2 tbs
-Water ¼ Cup
Prepare Lavash Flatbread:
-Warm water 1 Cup
-Bareek cheeni (Caster sugar) 1 & ½ tbs
-Khameer (Instant yeast) 2 & ½ tsp
-Chakki ka atta (Whole wheat flour) sifted 1 & ½ Cup
-Maida (All-purpose flour) sifted 1 & ½ Cup
-Namak (Salt) ½ tsp
-Water ½ Cup or as required
-Cooking oil 1-2 tsp
Assembling:
-Lavash bread
-Prepared sauce
-Salad patta (Lettuce leaves) chopped
-Potato fries
-Pickled cucumber julienne
-Tomato ketchup
-Mayonnaise
Directions:
Prepare Chicken for Shawarma:
-Pat dry chicken thigh pieces,place them on a tray & freeze for 4-6 hours.
-In a bowl,squeeze out onion water from onion,add tomato paste,lemon juice,yogurt,red chilli crushed,paprika powder,dried oregano,salt,cumin powder,garlic paste and olive oil,whisk well & set aside.
-On a cutting board,place frozen chicken thighs & cut into thin slices with the help of knife.
-In prepared marination,add frozen thin slices and mix well,cover & marinate for 30 minutes.
-In a frying pan,add cooking oil,marinated chicken (reserve remaining marinade for later use) & cook on medium flame until tender and dries up & set aside.
Prepare Sauce:
-In the same frying pan,add reserved marinade,tomato paste,mix well and cook for 2 minutes.
-Add water,mix well & cook for a minute & set aside.
Prepare Lavash Flatbread:
-In a small jug,add warm water,caster sugar,instant yeast,mix well,cover & rest for 5-10 minutes.
-In a bowl,add whole wheat flour,all-purpose flour,salt & mix well.
-Add dissolved yeast mixture & mix well.
-Gradually add water & knead until dough is formed.
-Add cooking oil and knead again,cover & let it proof for 1 hour (warm place).
-Grease hands with oil and knead dough again until smooth.
-Take a small dough (115g),make a ball,sprinkle dry flour & roll out thin with the help of rolling pin.
-Heat griddle,place rolled dough & cook until light golden (45 seconds).There will be bubbles.Flip and cook another side for about 45 seconds.
-Place lavash flatbread on kitchen towel & immediately cover with a towel to avoid drying out.You can stack them.
Assembling:
-On a butter paper,place lavash flatbread,add & spread prepared sauce,add lettuce leaves,cooked chicken,potato fries,pickled cucumber,tomato ketchup,mayonnaise,fold the sides then roll out and warp with butter paper (makes 6) & serve!

-Bowl mein pyaz ko squeeze ker ka pani nikal lein,tomato paste,lemon juice,dahi,lal mirch crushed, paprika powder,dried oregano,namak,zeera powder,lehsan paste aur olive oil dal ker ache tarhan whisk ker lein & side per rakhd ein.
-Cutting board per frozen chicken thighs rakh dein aur knife ki madad sa thin slices mein cut ker leuin
-Tayyar marination mein frozen thin slices dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
- Frying pan mein cooking oil aur marinated chicken (reserve remaining marinade for later use) dal dein aur darmiyani ancch per gul aur sukh janay tak paka lein & side per rakh dein.
Prepare Sauce:
-Us he frying pan mein reserved marinade aur tomato paste dal ker ache tarhan mix karein aur 2 minute kliya paka lein.
-Pani dal ker ache tarhan mix karein aur ek minute kliya paka lein & sde per rakh dein.
Prepare Lavash Flatbread:
-Chotay jug mein neem garam pani,bareek cheeni aur khameer dal ker ache tarhan mix karein aur dhak ker 5-10 minutes kliya chor dein.
-Bowl mein chakki ka atta,maida aur namak dal ker ache tarhan mix ker lein.
-Dissolved yeast mixture dal ker ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.
-Cooking oil dal ker dubara ghond lein aur dhak ker 1 hour proof hunay kliya rakh dein (warm place).
-Haathon ko oil sa grease karein aur ghond ker smooth dough tayyar ker lein.
-Chota dough lein (115g),ball bana lein aur maida chirak ker rolling pin ki madad sa thin bail lein.
-Tawa garam karein aur rolled dough rakh ker light golden ho janay tak paka lein (45 seconds).Jab bubbles ajayein tou flip ker ka dosri side ko 45 seconds kliya paka lein.
-Lavash flat bread ko kitchen towel mein rakh ker cover ker lein tak bread dry na ho.
Assembling:
-Butter paper per lavash flatbread rakh dein aur tayyar sauce dal ker pheela lein,salad patta,cooked chicken,potato fries,pickled cucumber,tomato ketchup,mayonnaise dal ker sides ko fold ker lein aur roll ker ka butter paper mein warp ker lein (makes 6) & serve karein.
