Ingredients:
Prepare Chicken & Mushrooms Filling:
-Cooking oil 2 tbs
-Pyaz (Onion) chopped 1 Cup
-Lehsan (Garlic) chopped 1 tbs
-Boneless chicken small cubes 250g
-Hari mirch (Green chilli) chopped 1 tbs
-Himalayan pink salt 1 tsp or to taste
-Dried parsley ½ tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Dried oregano 1 & ½ tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Mushrooms chopped 1 Cup
-Cream ½ Cup
-Hara dhania (Fresh coriander) chopped 2 tbs
Prepare Buns Dough:
-Warm water ¾ Cup
-Bareek cheeni (Caster sugar) ½ tbs
-Khameer (Instant yeast) 2 & ½ tsp
-Himalayan pink salt 1 tsp
-Makhan (Butter) melted ¼ Cup (50g)
-Anda (Egg) 1
-Doodh (Milk) 1-2 tbs
-Maida (All-purpose flour) sifted 3 Cups
-Milk powder 3 tbs
-Cooking oil 1 tsp
-Anda (Egg) whisked
-Makhan (Butter) melted
Directions:
Prepare Chicken & Mushrooms Filling:
-In a frying pan,add cooking oil,onion,garlic & sauté for 1-2 minutes.
-Add chicken & mix well until it changes color.
-Add green chilli,pink salt,dried parsley,red chilli crushed,dried oregano,black pepper powder,mix well & cook on medium flame for 2-3 minutes.
-Add mushrooms & mix well,cover & cook on low flame for 4-5 minutes.
-On low flame,add cream,fresh coriander,mix well & cook for 1-2 minutes & set aside.
Prepare Buns Dough:
-In a bowl,add warm water,caster sugar,instant yeast & mix well,cover & let it proof for 5 minutes.
-Add pink salt,melted butter,egg & whisk well.
-Add all-purpose flour,milk powder,mix well & knead until soft dough is formed.
-Grease with cooking oil,cover & let it proof for 1 hour at warm place.
-Sprinkle dry flour & knead until soft dough is formed.
-Divide the dough in two portions,take one portion,sprinkle dry flour & roll out with the help of rolling pin (12-inches).
-Cut the rolled dough in 6 triangular portions with a cutter then make cuts on each inner corner of triangle.
-Add 1-2 tbs of prepared filling on the broader side of each triangle & roll up,apply water on edges & seal both ends by applying water.
-Place all the buns in baking tray lined with baking paper,cover with kitchen towel & let them proof for 20 minutes.
-Apply egg wash & bake in preheated oven at 180°C for 35 minutes.
-Air fry at 150°C for 15-18 minutes (check in between).
-After baking or air fry apply melted butter on buns & serve (makes 12).

-Chicken dal ker ache tarhan mix karein aur rang tabdeel ho janay tak ache tarhan mix ker lein.
-Hari mirch,ink salt,dried parsley,lal mirch crushed,dried oregano aur kali mirch powder dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Mushrooms dal ker ache tarhan mix karein aur halki ancch per 4-5 minutes kliya paka lein.
-Halki ancch per cream aur hara dhania dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein & side per rakh dein.
Prepare Buns Dough:
-Bowl mein warm water,bareek cheeni aur khameer dal ker ache tarhan mix karein aur dhak ker 5 minute proof hunay kliya chor dein.
-Pink salt,melted makhan aur anda dal ker ache tarhan whisk karein.
-Maida aur milk powder dal ker ache tarhan mix karein aur ghond ker soft dough bana lein.
-Cooking oil sa grease karein aur dhak ker 1 hour garam jagha per proof hunay kliya rakh dein.
-Maida chirak dein aur ghond ker soft dough tayyar ker lein.
-Dough ko do hisson mein divide ker lein,ek portion lein aur maida chirak dein phir rolling pin ki madad sa bail lein (12-inches).
-Rolled dough ko 6 triangular portions mein cutter ki madad sa cut ker lein phir her triangle ka center mein cuts laga lein.
-1-2 tbs tayyar filling dal dein aur roll ker lein,edges per pani laga lein aur dono ends per pani laga ker seal ker lein.
-Buns ko baking tray lined with baking paper per rakh dein aur kitchen towel sa dhak dein aur 20 minutes kliya proof ker lein.
-Anda laga lein aur preheated oven mein 180°C per 35 minutes kliya bake ker lein.
-Air fryer mein 150°C per 15-18 minutes kliya air fry ker lein (check in between).
-Baking or air fryer ka bad buns per melted makhan laga lein aur serve karein (makes 12).
