Atta Nankhatai without Oven

Ingredients:

  • Chakki ka atta (Whole wheat flour) sifted 1 Cup
  • Baisan (Gram flour) ¼ Cup
  • Sooji (Semolina) 2 tbs
  • Elaichi powder (Cardamom powder) ½ tsp
  • Jaifil powder (Nutmeg powder) 1/8 tsp
  • Baking powder 1 tsp
  • Namak (Salt) 1 pinch
  • Baking soda ¼ tsp
  • Ghee ½ Cup
  • Powdered Sugar ½ Cup
  • Dahi (Yogurt) whisked ½ tbs
  • Anday ki zardi (Egg yolk) whisked 1
  • Badam (Almonds) chopped

Directions:

In a frying pan,add whole wheat flour and dry roast on low flame until fragrant (4-5 minutes).

Let it cool.

In a bowl,add roasted whole wheat flour,gram flour,semolina,cardamom powder,nutmeg powder, baking powder,salt,baking soda,mix well & set aside.

In a bowl,add ghee & whisk well for a minute.

Add powdered sugar & whisk well.

Add yogurt & whisk well.

Add dry ingredients,mix well & gently bring together the whole mixture to a dough (don’t knead).

Take 1 tbs of dough,make a ball (35g),lightly roll them in your palms and slightly flatten them (makes 12-13).

Grease baking tray with oil & lined with butter paper.

Place them in a baking tray,apply egg yolk with the help of brush,add almonds & press gently (keep some space between them as they expand while baking).

Baking without Oven:

In pot,add 1 pack of salt,place wire rack (minimum 2“high) and preheat on medium flame for 15 minutes.

Place prepared nankhatai tray,cover and bake in pot on medium flame for 20 minutes.

Baking in Oven:

Bake in preheated oven at 180 C for 20 minutes.

When cooled,store the nankhatai in an airtight container.

Serve with tea!
