Ingredients:

-Hari elaichi (Green cardamom) 2

-Darchini (Cinnamon stick) 1

-Sabut kali mirch (Black peppercorns) 14-15

-Laung (Cloves) 6-7

-Javitri (Mace) 1 blade

-Kala zeera (Caraway seeds) ½ tsp

-Zeera (Cumin seeds) 1 tsp

-Sabut lal mirch (Button red chillies) 5-6

-Curry patta (Curry leaves) 12-15

-Tamatar (Tomatoes) 3 medium

-Podina (Mint leaves) 6-8

-Hara dhania (Fresh coriander) 1-2 tbs

-Hari mirch (Green chillies) 2-3

-Water ¼ Cup

-Lemon juice 3 tbs

-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste

-Haldi powder (Turmeric powder) ½ tsp

-Chaat masala 1 tsp

-Namak (Salt) 2 tsp or to taste

-Dhania powder (Coriander powder) ½ tbs

-Kisan Banaspati ½ Cup

-Pyaz (Onion) sliced 2 medium

-Adrak lehsan paste (Ginger garlic paste) 2 tbs

-Zeera (Cumin seeds) 1 tbs

-Water 1 Cup

-Chana daal (Split bengal gram) 350g (soaked & boiled)

-Hara dhania (Fresh coriander) chopped

-Adrak (Ginger) julienne

-Hari mirch (Green chilli) slices

-Adrak (Ginger) julienne

-Hara dhania (Fresh coriander) chopped

 

Directions:

-In a frying pan,add green cardamom,cinnamon stick,black peppercorns,cloves,mace,caraway seeds,cumin seeds,button red chillies and dry roast for 1-2 minutes.

-Add curry leaves & dry roast until fragrant.

-Let it cool.

-In a spice mix,add roasted spices & blend to make a powder & set aside.

-In a jug,add tomatoes,mint leaves,fresh coriander,green chillies,blend well & set aside.

-In a bowl,add water,lemon juice,red chilli powder,turmeric powder,chaat masala,salt,coriander powder,whisk well & set aside.

-In a wok,add kisan basmati & let it melt.

-Add onion & fry until light golden.

-Add ginger garlic paste,cumin seeds,mix well and cook for 1-2 minutes.

-Add blended tomato mixture,mix well and cook on low flame for 6-8 minutes.

-Add prepared spices water,mix well and cook for 1-2 minutes.

-Gradually add water,mix well and cook on low flame until oil separates (10-12 minutes).

-Now add prepared spice mix (reserve ½ tbs for later use),mix well and cook for 3-4 minutes.

-Add boiled split bengal gram & mix well.

-Add fresh coriander,ginger,cover & simmer on low flame for 8-10 minutes.

-Add prepared spice mix and mix well.

-Sprinkle reserved spice mix & garnish with green chilli,ginger,fresh coriander & serve!
