Prepare Gravy:

-Cooking oil ¼ Cup
-Zeera (Cumin seeds) 1 tsp
-Dahi (Yogurt) whisked ½ Cup
-Sabut dhania (Coriander seeds) roasted & crushed 1 tsp
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Iodized Himalayan pink salt 1 tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Water ½ Cup
-Cream ¼ Cup
-Kasuri methi (Dried fenugreek leaves) 1 tsp
Prepare Vegetable Seekh Kabab
-Pyaz (Onion) 1 medium
-Hara pyaz (Spring onion) 2-3 stalks
-Gajar (Carrot) 1 medium
-Shimla mirch (Capsicum) 1 medium
-Lehsan (Garlic) 5 cloves
-Adrak (Ginger) 1-inch piece
-Hari mirch (Green chillies) 2
-Aloo (Potato) Boiled 500g
-Maida (All-purpose flour) ½ Cup
-Lal mirch (Red chilli) crushed 1 tsp
-Sabut Dhania (Coriander seeds) roasted & crushed 1 tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-lal mirch powder (Red chilli powder) 1 tsp or to taste
-Garam masala powder ½ tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Lemon juice 1 tbs
-Hara dhania (Fresh coriander) chopped handful
-Cooking oil (For frying) as required
-Cream as required
-Hara dhania (Fresh coriander) chopped as required
Direction:
Prepare Gravy:
-In a blender Jug, add blanched tomato, green chillies, garlic, fresh coriander, fried onion & blend well.
-In a wok, add cooking oil & heat it, add cumin, fry for 30 seconds.
-Add blended mixture & mix well then add yogurt, coriander, red chilli powder, pink salt, turmeric powder, cumin & mix well, then cover & cook on low flame for 6-8 minutes.
-Remove cover add water & mix well.
-Add cream, mix well, add dried fenugreek leaves, cover & cook on low flame for 10-12 minutes.
Prepare Vegetable Seekh Kabab
-In a chopper, add onion, spring onion, carrot, capsicum, garlic, ginger, green chillies, chop coarsely.
-Squeeze out all the excess water from chopped veggies with the help of muslin cloth.
-In a bowl, add boiled potatoes, mash well, with the help of a masher.
-Add chopped veggies, all-purpose flour, red chilli crushed, coriander, pink salt, turmeric powder, red chilli powder, garam masala, cumin, lemon juice, fresh coriander & mix until well combined, seekh kabab mixture is ready.
-With greased hand, take small quantity of mixture (55g) & skew it on metal skewer to make kababs (Makes 12)
-In a wok, add cooking oil, heat it, add kababs, fry on medium flame until golden.
-In a serving platter add vegetable seekh kabab, pour gravy over kabab, garnish with cream & fresh coriander, serve with naan!

Direction:
-Blender mein blanched tamatar, hari mirchein, lehsan, hara dhania aur fried piyaz dalein aur achi tarah blend karen.
-Wok mein cooking oil dalein aur garam karen, phir zeera dalein aur 30 second tak fry karen.
-Blended mixture add karen aur mix karen, phir dahi, dhania, lal mirch powder, pink namak, haldi powder aur zeera dalein, achi tarah mix karen, phir cover kar ke halki aanch par 6–8 minute pakayen.
-Cover hata kar pani dalein aur achi tarah mix karen.
-Cream dalein, mix karen, sukhi hui kasuri methi dalein, phir cover kar ke halki aanch par 10–12 minute pakayen.
-Chopper mein piyaz, spring onion, gajar, shimla mirch, lehsan, adrak aur hari mirchein dalein aur moti moti chop kar lein.
-Muslin cloth ki madad se chopped sabziyon ka sara extra pani nichor lein.
-Bowl mein ubalay hue aloo dalein aur masher ki madad se achi tarah mash karen.
-Ab chopped sabziyan, maida, crushed lal mirch, dhania, pink namak, haldi powder, lal mirch powder, garam masala, zeera, lemon juice aur hara dhania dalein aur achi tarah mix karen, seekh kabab ka mixture tayyar hai.
-Greased haath se mixture ki choti quantity (55g) lein aur metal seekh par laga kar kabab bana lein (12 kabab tayyar honge).
-Wok mein cooking oil dalein, garam karen, phir kabab add karen aur medium flame par sunehray hone tak fry karen.
-Serving platter mein vegetable seekh kabab rakhain, upar se gravy dalein, cream aur hara dhania se garnish karen aur naan ke sath serve karen!
