Ingredients:
-Hari mirch (Green chillies) 6-8 or as required
-Lehsan (Garlic) 3-4 cloves
-Adrak (Ginger) 1-inch piece
-Hara dhania (Fresh coriander) handful
-Pyaz (Onion) 1 small
-Iodized Himalayan pink salt 1 pinch
-Cooking oil 1 tbs
-Tamatar (Tomato) chopped 1 small
-Water 1-2 tbs
-Sabut dhania (Coriander seeds) roasted & crushed 1 tsp
-Kali mirch powder (Black pepper powder) ¼ tsp
-Chaat masala ¼ tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Zeera powder (Cumin powder) ½ tsp
-Water ¼ Cup or as required
-Anday (Eggs) boiled 3-4
-Water 2-3 tbs or as required
-Garam masala powder 1 pinch
-Kasuri methi (Dried fenugreek leaves) 1 tsp
-Hari mirch (Green chilli) sliced
-Hara dhania (Fresh coriander) chopped
Directions:
-In mortar pestle,add green chillies,garlic,ginger,fresh coriander,onion,pink salt & crush coarsely.
-On a griddle,add cooking oil & heat it.
-Add crushed mixture,mix well & cook on medium flame for 1-2 minutes.
-Add tomato,mix well & cook for 3-4 minutes.
-Add water & mix well.
-Add coriander seeds,black pepper powder,chaat masala,pink salt,cumin powder,mix well & cook for 1-2 minutes.
-Gradually add water,mix well & cook on medium flame until oil separates.
-Add grated boiled eggs & mix well.
-Add water,mix well & cook for 2-3 minutes.
-Sprinkle garam masala powder,dried fenugreek leaves,green chilli,fresh coriander,cover & cook on low flame for 30 seconds.
-Serve with paratha & tea!

-mortar & pestle mein hari mirchein, garlic, ginger, fresh coriander, onion, pink salt daal kar coarsely crush kar lein.
-Griddle par cooking oil garam karen.
-Crushed mixture daal kar achi tarah mix karein aur medium flame par 1-2 minutes cook karen.
-Tomato daal kar mix karein aur 3-4 minutes cook karen.
-Pani dal ker ache tarhan mix karein.
-Ab is mein coriander seeds, black pepper powder, chaat masala, pink salt, cumin powder daal kar 1-2 minutes cook karein.
-Dheere dheere water add karte hue mix karen aur medium flame par cook karein jab tak oil separate ho jaye.
-Grated boiled eggs daal kar achi tarah mix karein.
-Pani daal kar 2-3 minutes cook karen.
-Upar se garam masala powder, dried fenugreek leaves, green chilli, fresh coriander sprinkle karein, cover karke low flame par 30 seconds cook karen.
-Paratha aur chai ke saath serve karein!
