Ingredients:
Prepare Filling:
-Cooking oil 1 tbs
-Beef undercut 350g
-Pyaz (Onion) chopped 1 medium
-Adrak Lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Himalayan pink salt 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Paprika powder ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Water 1-2 tbs
-Water 1 Cup
-BBQ sauce 3 tbs
-Hot sauce 2 tbs
Prepare Dough:
-Khameer (Instant yeast) 2 & ½ tsp
-Bareek cheeni (Caster sugar) ½ tbs
-Water warm ¼ Cup
-Anda (Egg) 1
-Dahi (Yogurt) ¼ Cup
-Cooking oil 1 tbs
-Maida (All-purpose flour) sifted 4 Cups
-Himalayan pink salt 2 tsp
-Baking powder ½ tsp
-Water 1 Cup or as required
-Cooking oil 1 tsp
-Cheddar cheese & Mozzarella cheese grated as required
-Anday ki zardi (Egg yolk) 1
-Doodh (Milk) 1 tbs
-Til (Sesame seeds) as required
-Makhan (Butter) melted
Directions:
Prepare Filling:
-In a frying pan,add cooking oil,beef & sear on medium flame from all sides until golden & set aside.
-Add onion,ginger garlic paste,mix well & cook for a minute.
-Add pink salt,black pepper powder,paprika powder,cumin powder & mix well.
-Add water & mix well.
-Now put seared beef & mix well.
-Add water,mix & bring it to boil,cover & cook on low flame until beef is tender (1 & ½ hour).
-Turn off the flame & shred with the help of forks & mix well.
-Turn on the flame,add BBQ sauce,hot sauce,mix well & cook for a minute & set aside.
Prepare Dough:
-In a bowl,add instant yeast,caster sugar,warm water & mix well,cover & let it bloom for 10-12 minutes.
-Add egg,yogurt,cooking oil & whisk well.
-Add all-purpose flour,pink salt,baking powder & mix well.
-Gradually add water & knead until dough is formed.
-Grease dough with cooking oil,cover & let it proof for 1 & ½ hour.
-Sprinkle dry flour & knead until smooth dough is formed.
-Take a dough (60g),make a ball & roll out with the help of rolling pin (4 inches) (thin from corners & thick from center).
-Add prepared filling (1 tbs),cheddar & mozzarella cheese,gather all the edges,pinch & seal to make a ball.
-Place all stuffed balls on baking tray (greased & lined with baking paper),cover with kitchen towel & let it proof for 15 minutes.
-In a bowl,add egg yolk,milk & whisk well.
-Apply on stuffed buns & sprinkle sesame seeds (makes 16).
-Bake in preheated oven at 200C for 15-20 minutes (on both grills).
-After baking,apply melted butter & serve with tomato ketchup!

-Pan mein pyaz aur adrak lehsan paste dal ker mix karein aur ek minute kliya paka lein.
-Pink salt,kali mirch powder,paprika powder aur zeera powder dal kar achi tarah mix karein.
-Pani dal ker ache tarhan mix ker lein.
-Ab seared beef wapas daal kar mix karein.
-Pani dal kar mix karein aur ubal anay ka bad dhak dein aur halki ancch per gosht gul janay tak paka lein (1 & ½ hour).
-Chulha bund ker dein aur forks ki madad sa beef ko shred ker lein aur ache tarhan mix ker lein.
-Chulha on karein,BBQ sauce aur hot sauce dal kar mix karein aur ek minute pakaayein aur side par rakh dein.
Prepare Dough:
-Ek bowl mein khameer,bareek cheeni aur pani dal kar mix karein aur dhak kar 10-12 minutes kliya bloom ker lein.
-Anda,dahi aur cooking oil dal ker whisk karein.
-Maida,pink salt aur baking powder dal ker ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.
-Dough ko cooking oil se grease karein aur dhak kar 1 & ½ hour proof hunay kliya chor dein.
-Dry flour chirak kar dough ko smooth hone tak phir se gundh lein.
-Dough ka 60g tukra lein,ball banayein aur rolling pin se 4 inch ka bel lein (kinaray patle aur beech se thora mota).
-Tayyar filling (1 tbs),cheddar aur mozzarella cheese dal kar edges ko gather karein aur pinch ker ka seal karein aur ball banayein.
-Sab stuffed balls ko greased aur baking paper wali baking tray mein rakh dein,kitchen towel se dhak kar 15 minutes proof karein.
-Ek bowl mein anday ki zardi aur doodh daal kar whisk karein.
-Stuffed buns par brush karein aur til chirak dein (makes 16).
-Preheated oven mein 200C per 15-20 minutes kliya bake ker lein (on both grills).
-Baking ka bad melted makhan laga lein aut tomato ketchup ka saath serve karein!
